I had cupcakes at my wedding instead of a multi-tiered wedding cake. It was so much fun to see my guests getting down on the dance floor with champagne in one hand and cupcake in another. Best part? No ridiculous cake cutting fee! No fooling. There is really a “cake cutting fee”. Do vendors know how to gouge brides for every penny or what?
But I have always liked cupcakes since I was a little girl. I remember my mom making funfetti cupcakes for my birthday grades 1-6. It was such an honor to wear the “birthday crown” and hand out cupcakes to my classmates on the last day of school. (My birthday is in July so we always celebrated my birthday on the last day of school. What a gip! haha)
I guess I have to admit that I came down with the “cupcake fever” about 1 year ago as it was taking over the blogosphere and now its a full blown obsession. Do I think its a fad? I don’t think so. Maybe the nostalgia of paying 4 freaking dollars for 1 cupcake will start to get old (if it hasn’t already) in this economy but the concept of a cupcake, a portable bite size dessert as a vehicle for frosting, will be timeless for me.
Eek! I just realized that Cupcake Hero is due tomorrow! Where did this month go?

It’s been a little while since I’ve done an “Ask IHC” segment huh? I’ve answered this question many times via emails so I figured its about time to just post the darn thing for everyone to read. Sound good?
PS. I found the most adorable heart sprinkles in the $1 spot at my favorite french store. You know? Tarjay… LOL. You can bet I am getting in the Valentines mood. I am thinking chocolate cupcakes with heart sprinkles are in the near future, no?

I have a question related to cupcake, I make a big quantities when I have time for my kids, so i need to know how many days it can be refrigerated, I know you would like to know the ingredients, it’s very simple;
Betty Corker Ready Mix cake + eggs + oil + water
and the frosting is:
Butter + Icing sugar + 2 spoon of fresh milk.
I would love to know how many days i keep the cake in the fridge and also the frosting.

I have to admit I giggled at being addressed as “Ms. I Heart Cuppycakes”. So cute! :)
I would say refrigerated maybe 1 week but I personally prefer to freeze my cupcakes if I am working on a large cupcake order. I’ve baked cupcakes unfrosted and froze them for up to 1 month and they still taste yummy after defrosting!

50 naked red velvets and 50 naked vanilla cupcakes “chilling” in my freezer
What I usually do is bake the cupcakes, let them cool, wrap each one tightly in saran wrap and freeze them unfrosted. I find that the saran wrap helps the cupcakes retain their moisture. When I am ready for them, I unwrap and let them defrost at room temp for maybe 20-30 minutes (maybe longer depending on your freezer temperature) and then frost with buttercream (or whatever you use). I also like to make big batches of frosting ahead of time and put them in airtight containers and freeze them too! Just let it defrost at room temp before frosting the cupcakes.

I need some reader help, please…
My friend’s daughter’s best friend’s mom (did you get that?) asked me if I could bake cupcakes for her daughter’s birthday next month but the catch is that she has celiac disease so she needs gluten-free cupcakes. I am always up for a challenge and just think its wrong that you don’t have cupcakes for your birthday so I said yes. Since I get many emails from IHC readers about how to change a recipe on my blog to gluten free I thought I’d pose the question here.
To be honest besides changing the flour to gluten free flour I wasn’t sure if there were other things that needed to be substituted so… edumacate me people!

I Sees Chocolate Caramel Crunch Cupcakes

Mmmm… chocolate.
There are lots of different brands of chocolate out there. Vosges, Hershey, Ghiradelli, Scharffen Berger, Valrhona, Godiva, Dagoba, Guittard, Askinosie and I am sure with some stealth googling, I could go on and on. Obviously we love our chocolate to have so many competing companies, no?
Now you might now know all the ones I listed above and heck I probably don’t even know half of whats really out there. For all I know, there might be a chocolate that is beacoup bucks b/c its defecated from a monkey-cat mammal thing from Sri Lanka. Oh wait. That’s a coffee. Seriously! No joke! But hey I wouldn’t be surprised if there was a chocolate too. I bet you are all reaching for a chocolate bar right about now eh?
As I was saying… you might not know all the brands out there but EVERYONE knows Sees candy. Am I right?
I always use the holidays as an excuse to buy a box (or 10) of Sees candy. I tell myself they are gifts for [insert coworker or random family member here] but for some reason I never give them away. Go figure!
But I am THAT girl that takes a bite of every chocolate in the Sees candy box so that I can taste them all. Actually I take a bite and then give it to my husband. So if you think about it, I am really not wasting it. Its actually a courtesy so I can tell my husband what the favor is. I am just a good wifey like that. (Yeah that almost sounds believeable. HAHA)
So imagine my delight when Chris of Sees candy sent me a box of Molasses chips and all I had to do was bake a Sees-inspired cupcake and pimp out Sees website. I can totally do that! What? I never said I couldn’t be bought. Come on. Don’t look at me like that. IT’S CHOCOLATE!

(Recipe adapted from Cupcakes by Shelly Kaldunski | photos from me)
Makes 12 cupcakes
INGREDIENTS
For chocolate cupcake
2/3 cup AP flour
2-1/2 tbsp unsweetened cocoa powder
3/4 tsp baking powder
3/4 tsp salt
3 oz bittersweet chocolate, chopped
1/2 cup + 3 tbsp unsalted butter, cut in pieces
3/4 cup + 2 tbsp sugar
3 large eggs
1 tsp vanilla extract
For swiss meringue caramel swirl buttercream
3 egg whites, room temperature
3/4 cup sugar
pinch salt
1 cup unsalted butter, cut into 16 pieces, room temp
1/4 cup caramel ice cream topping
chocolate-toffee, crushed, garnish (I used Sees Candy Molasses chips)
INSTRUCTIONS
To make chocolate cupcakes—
Preheat oven to 350F. Prepare cupcake pan with liners.
In a large bowl, combine flour, cocoa powder, baking powder and salt. In heatproof bowl, place chocolate and butter over simmering water and stir constantly until melted, about 5 minutes. Let the chocolate mixture cool to room temp before adding sugar. Stir sugar until incorporated.


Add eggs, one at a time, mixing to combine after each egg. Beat in vanilla. Gently stir in the flour mixture, a little at a time, until all combine. Do not overmix.

Fill cupcake liners about 2/3 full. Bake for about 20-22 minutes. Let cool before frost.

To make buttercream—
In a large heatproof bowl, combine the egg whites and sugar. Set the bowl over simmering water in a saucepan and whisk constantly until sugar is completely dissolved (160F), about 2 minutes. Remove from heat.

In a stand mixer using a whisk attachment, whip egg white mixture on high until it holds stiff peaks, about 5-6 minutes.
Switch to flat beater and add the salt. Add butter a few at a time, beating well after each addition. Don’t worry if buttercream starts to look curdled. Just keep beating on until buttercream is smooth and creamy, about 3-5 minutes. Add the caramel ice cream topping to the buttercream, folding only until swirled but not completely combined.

He’s not really a big caramel fan like me but he really liked this cupcake esp the toffee bits.
Wifey rating: A
The “cake” is chocolate-y and moist and the SMBC frosting is light and creamy. Love the swirls of caramel in the frosting. Its kind of hard to see in the picture. I’ll probably add more caramel next time too. Maybe 1/2-1 cup to pump up the caramel swirl. Honestly you really can’t go wrong with a chocolate and caramel combination. Can you? haha

Ok I realize that I am 3 days (almost 4 days at the time of publishing) late but let’s just pretend I didn’t… drink so much champagne that my husband had to carry me to the car and I didn’t get a chance to do the once over for my camera before we left my friends’ party which delayed me from posting these cupcakes mkay? Thanks.
Moving on.
Once again I was in charge of dessert for our New Year’s Eve celebration. I think by now its just an unwritten rule among my friends that “Clara does cupcakes”. (Is it just me or does that sound kinda porno? HAHA) Of course the occasion called for another edition of crunkcakes so I asked my “tweeps” aka twitter peeps (see twitter link on the sidebar) if they preferred champagne with chocolate or strawberries and the resounding response was strawberries so that’s what I did! Give the tweeple what they want right?
PS. I know I said in an earlier post that I wasnt going to make a resolution but I change my mind after reading all your comments. You wanna hear it?

I kid. I kid. LOL. I had you going there for a minute eh?
But seriously. My New Year’s resolution is simple. I just want to remember to smile everyday. Smiles are contagious. Oh yeah and… curb my retail therapy. A little.

Isn’t my champagne flute cute? It was a wedding gift from MOH. Mine was a “C” and hubs had a “T”.
Champagne and Strawberry Cupcakes
(Recipe adapted from Good Things Catered & Crazy About Cupcakes | photos from me!)
Makes about 24 cupcakes
INGREDIENTS
For strawberry cupcakes
2-1/2 cups cake flour
1 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter
1-1/2 cup sugar
2 eggs
1/3 cup buttermilk
1/4 cup oil
1 tsp vanilla extract
2 cup chopped strawberries
For champagne buttercream
3/4 cup shortening
1-1/2 sticks (12 tbsp) unsalted butter, room temperature
3 tbsp champagne
4-1/2 cups confectioners sugar
INSTRUCTIONS
To make cupcakes—
Preheat oven to 350 degrees. Prepare cupcake pan with liners.
Sift flour, salt, and baking soda in medium bowl. In a stand mixer fitted with flat beater, cream butter and sugar until fluffy. Add eggs one at a time until combined. Add buttermilk, oil and vanilla until combined. Add flour mixture and stir until just combined. Fold in strawberries.


Fill cupcake liners about 1/2-2/3 full. Bake for 20-22 minutes.

For champagne buttercream—
Beat the shortening and butter until combined. Add the champagne. Slowly add confectioners sugar and beat until smooth. You can add more champagne if you want to get a thinner consistency.
[NOTES: I used about 2-1/2 tbsp champagne.]

I absolutely loved this strawberry cupcake recipe (and I’ve eaten alot of cupcakes!). I’d go as far as to say that it is now my go-to strawberry recipe. I thought the champagne buttercream complimented it so well for the occasion.
Other rating: A
Nothing but raves although some weren’t a fan of the strawberry chunks. Maybe next time I’ll use strawberry extract instead of vanilla?

My Favorite Cupcakes of 2008

I LOVE IT!
I am a list person. I have post-its within my reach at all times in case I feel a list coming on. Different colors means different things. Purple post-its are general life lists, blue post-its are internet/blog related lists, pink post-its are usually shopping lists although I have been known to switch it up with yellow too. I might be the only one that lets out a squeal b/c Santa brought her a Costco size package of post-its for her stocking. Yeah. I know. Its borderline strait jacket. Maybe you should pray for me.
So of course I couldn’t be left out of the New Years blogging list posting that has taken over my Google Reader. If you can’t beat em, join em!
