I know. I know.
I’ve been a big slacker in the cupcake contest/event department these last few months. (Sorry Cupcake Hero and Iron Cupcake!) Blame it on a lack of motivation, time, energy, all of the above, whatever.
No matter the reasons, I knew I had to make time for the Mixing Bowl cupcake contest even if it cut into my Girls Next Door (guilty pleasure #839457) marathon. (Don’t judge me. Its like a train wreck. I can’t look away.) Though I admit the $200 prize money was a great incentive to make the time.
Hey… Don’t give me that look!
You can’t tell me that wouldn’t motivate you too esp in these hard economic times. Heck I’ll dance around in a chicken suit on a street corner if you pay me enough. What can I say? Money is motivating. And momma needs a new pair of shoes to pay off her credit card.
The rules are pretty simple. Create a cupcake. Upload picture to their website. Then there’s some fine print that no one reads and that’s it. Easy right? You’d think so but its not. I tend to make things more difficult. I get anxious with “too” much creative freedom. I need guidance, rules, restrictions. So coming up with a cupcake… any cupcake… was alot harder than I thought.
But eventually I went to my happy place (ie Tarjay LOL) and while shopping the 1 spot decided to create a cupcake for my husband. He’s turning the big 3-0 this Saturday. I figure this was a good opportunity to bake his favorite cupcake with a little something extra. I guesssss he deserves it.

Recipe adapted from Cupcakes by Shelly Kaldunski & ::Cupcakes!:: by Elinor Klivans
Makes about 12 cupcakes
INGREDIENTS
For red velvet cupcake
1-1/2 cups cake flour
2 tbsp unsweetened cocoa
3/4 tsp baking powder
1/4 tsp salt
1/2 cup buttermilk
1 tsp vanilla extract
1/2 tsp vinegar
4 drops red food coloring (I used a couple squirts of Ateco red color gel)
3/4 cup sugar
4 tbsp butter
1 egg, room temperature
For cream cheese frosting
8oz cream cheese, room temperature
1 cup (2 sticks) butter, room temperature
1 tsp vanilla extract
1 lb (~4 cups) powdered sugar, sifted
For chocolate coating*
2 cups semisweet chocolate chips (I used 1/2 milk chocolate and 1/2 semi-sweet chocolate)
3 tbsp canola or vegetable oil (I used vegetable oil)
* This recipe makes a good amount of chocolate but its easier to work with more than less chocolate when dipping. You can always use leftovers drizzled over ice cream. Yum!
INSTRUCTIONS
To make cupcakes—
Preheat oven 350F. Prepare cupcake pan with liners.
Sift together cake flour, cocoa powder, baking powder and salt into a bowl. In a large Pyrex measuring cup, whisk together the buttermilk, vanilla, vinegar and red food coloring; set aside. In a stand mixer with flat beater, beat the sugar and butter on medium speed until light and fluffy, 2-3 minutes. Add the egg. Mix to combine. Add the flour mixture in 3 additions alternating with buttermilk mixture in 2 additions, ending with the flour mixture.
Fill each liner about 2/3-3/4 full. Bake about 22-25 minutes until toothpick comes out clean. Let cupcakes cool before frosting.
To make frosting—
Combine the butter and cream cheese together in a mixer fitted with a flat beater attachment until creamed. Add vanilla extract. Gradually add powdered sugar. Scrape down the bowl as needed.
Using a Magic Tip 9ST round tip, pipe cream cheese frosting onto cupcake. Freeze to set frosting while making chocolate coating.
To make chocolate coating—
In a heatproof bowl, combine the chocolate and oil and melt over a saucepan of simmering water. Stir until chocolate melted and smooth. Let cool for 15 minutes.

To assemble cupcakes—
Holding the cupcake upside down by the bottom, dip the cupcake into the chocolate until all the frosting is covered. Let excess chocolate drip off.

[NOTES: You can leave the cupcake liner on if you like but I found it easier to dip all the frosting into the chocolate when I took the liner off.]
Then let cool at room temperature for 15 minutes so the chocolate firms up.

I like red velvet. Its not my favorite but I like it. Let me just tell you that adding the chocolate coating over the cream cheese frosting is AH-FREAKING-MAZING. If you like chocolate, you’ll love my twist on the red velvet cupcake.

Either you all really wanted to win some cupcake liners or you have strong opinions on what cupcake flavor says “thank you”. I bet its the former rather than the latter huh? Either way the response was awesome! Thank you for all comments. I will post the random winner by this weekend.
Let me back track a little bit and give you some background.
T is a high school teacher. Not sure if I’ve mentioned that before but there you go. He’s involved in alot of activities and many times those activities are accompanied by his wifey’s (that’s me!) cupcakes. I guess you could say that his students and coworkers are kinda cupcake spoiled by me. So naturally when he wanted to give a little something something as a thank you to 2 students’ moms who went above and beyond for a recent school related activity, cupcakes were the natural suggestion. But I was at a loss as to what would constitute a good “thank you”. Hence my inquisitive post and twitter to all my readers.
I found myself reading all the comments nodding my head in agreement with practically every flavor. Vanilla good. Chocolate good. Fruit good. Crunkcake great! See? You really can’t go wrong with any cupcake. Heck even a meatloaf cupcake sounds pretty darn tasty to me! (T vetoed that idea though. Buzzkill.)
I have to admit I am not sure if I should love or hate the ones that left a comment about a variety pack b/c ultimately that’s what T enthusiastically agreed with. His rationale was that in a variety pack it’s like getting more than one “thank you”. Personally I think the one that bakes should be the one that chooses what to bake but what do I know right? But don’t worry. I made T do all the dishes. LOL
We narrowed down the choices to 4 cupcakes.

Chocolate cupcakes w/ chocolate buttercream
Funfetti cupcakes w/ vanilla buttercream and rainbow sprinkles (see recipe after cut)

Do you ever put your foot in your mouth and then regret it?
My hubs picked me up from work on Friday and I was telling him about my CW’s husband delivering flowers to work for Valentines Day. Two dozen red roses. I admit I was jealous. I wanted flowers to flaunt around the office too. So I asked him why some men take the time to plan surprises, buy flowers, make reservations and other men (like my husband)… don’t. To be honest, I am not asking my husband to change. Just curious how some men are programmed to be more… uh… romantic?
He didn’t say much. Just kinda nodded and mumbled some incoherent words. If anything my hubs has learned that when I go on tirades that if he just keeps quiet, it will be over soon. I guess I was just in a tirade mood and it continued until we walked into the apt.
Guess what was on the dining table? Flowers and a little package.
I yelled “What is that? What the heck is that?” over and over again.
We had already bought our Valentines’ gift for each other. We decided to do a combined gift and splurged on a Wii + Wii fit last week so I wasn’t expecting him to do anything else. If I don’t request something, it doesn’t happen. His MO hasn’t changed in years.
But he just smiled mischievously.

Electrolux Cupcake Exchange to fight Ovarian Cancer

If you keep up with anything and everything in the cupcake world (like me) you’ve probably heard that Electrolux is teaming with Kelly Ripa to fight Ovarian Cancer, one cupcake at a time. What do I think? I say… FanFREAKINGtastic! So I wanna do my part to spread the world.
The gist is: the more virtual cupcakes we send, the more money Electrolux will cough up donate to the Ovarian Cancer Research Fund.
Here’s what I am gonna do.
Today. Valentines’ Day. All day. If you send me a cupcake, I’ll send you one too! Leave me a comment letting me know you sent me one with a valid email address so I can return the flavor. teehee.

Chocolate and Licorice Cupcakes

Hallelujah! Its finally Friday!
Its about freaking time! This week seemed to drag for me. Maybe its because I was anticipating the long weekend? *shrugs
I usually spend my Friday nights hanging out with hubs. Sometimes we’ll eat out. Sometimes we’ll eat in. I prefer to eat out. Hubs prefers to eat in. But my little brother (he’s 17 and ALOT taller than me but he’ll always be baby to me) called me last week to see if he could come over tonight so I could teach him how to bake cupcakes for his “friendgirl”. So we ate in. Bacon cheeseburgers. Onion rings. Cherry coke. Just in case you were wondering… (Hey don’t judge me! Friday calories don’t count right?)
Wait! I got sidetracked by burger talk. Friendgirl? Don’t you mean girlfriend?
Nope. Its friendgirl. Friendgirl must be a new term. Its more serious than just dating but not as committed as girlfriend. Whatever you say bro. Either way. I couldn’t pass up the chance to see my little brother AND bake cupcakes so that’s how I spent my Friday night.
When it came to flavor he knew exactly what he wanted. Friendgirl’s favorite candy is chocolate covered red licorice. Um eeewww? I know I said black licorice in my previous post but I guess I was mistaken. It suppose to be red. It doesn’t matter either way. The combination sounds narsty to me. Needless to say I was skeptical. But little brother wouldn’t budge. Not even for red velvet. He wanted chocolate licorice.
What was my husband’s contribution? The name. Chizzler. Get it? Chocolate + twizzler.
I am not making that up. It was either Chizzler or Chocorice.
My husband thinks he’s so funny. But he’s not.
Please stop laughing. You’ll only egg him on.

Chizzler Cupcakes
Recipe adapted from Cupcakes by Shelly Kaldunski
Makes about 12 cupcakes
INGREDIENTS
For chocolate cupcakes
2/3 cup AP flour
2-1/2 tbsp unsweetened cocoa powder (I used Hershey)
3/4 tsp baking powder
1/4 tsp salt
3 oz bittersweet chocolate, chopped (I used Ghiradelli chocolate baking chips)
1/2 cup + 3 tbsp unsalted butter, cut into pieces
3/4 cup + 2 tbsp sugar
3 large eggs, room temperature
1 tsp vanilla extract
For red licorice buttercream
1/2 cup (1 stick) unsalted butter, room temperature
3 cups powder sugar, sifted
2 tbsp milk (I used half-and-half instead)
1/2 tsp cherry oil
INSTRUCTIONS
To make chocolate cupcakes—
Preheat oven to 350F. Prepare pan with cupcake liners.
In a bowl, combine flour, cocoa powder, baking powder and salt. Set aside. Put the chocolate and butter in a heatproof bowl and set over simmering water in a saucepan. Stir frequently until melted, about 5 minutes. Remove bowl from saucepan and let cool to room temperature, about 10-15 minutes.


Stir in the sugar until combined. Add eggs one at a time and beat until combined. Then add vanilla extract. Gradually add flour mixture and fold into chocolate mixture. Try not to overmix.

Fill the cupcake liners about 1/2-2/3 full. Bake for about 20-22 minutes or until a toothpick inserted in the center comes out clean. Let cool before frost.

To make licorice buttercream—
In a stand mixer fitted with flat beater, cream the butter. Gradually add powder sugar and stir to combine. Add milk and cherry oil. Beat until smooth.


[NOTES: I wanted the frosting to be a bright red so I added some red food coloring too.]
Frost cupcakes with a Wilton 1M piping tip. Garnish with sprinkles.

The chocolate cupcake was moist and extra chocolate-y from the cocoa powder and bittersweet chocolate. I have to admit the frosting really does taste like red licorice. I am not a huge fan of licorice but if you are, then you’ll love it!
Other rating: A+
Little brother isn’t a huge dessert person (gasp!) but he raved about this cupcake. “It totally works Clara! I told you so!” He was pretty excited to give it to friendgirl tomorrow. Isn’t young love so cute?

I am not really a wine person. (Sorry April!) I’ll drink it on special occasions – New Years, weddings, birthdays, Valentines’ Day – but I think its like coffee or diet soda. More of an acquired taste. I tend to like the girly alcoholic drinks – martinis, cosmos, margaritas. You know? The ones that have a sweet taste vs the ones that knock you over with just a whiff. But I am willing to try most things at least once (you won’t find me bunge jumping anytime soon though) esp when there is a dare involved. So when my friend bought me a bottle of Cupcake Chardonnay (do my friends know me or what?) and double dog dared me to drink the whole bottle. Well… I had to. She dared me!
… and that’s why it took me a week to get this post up.

Cupcake Hero #11 [White Chocolate]

… and now for the shameful news.
The Cupcake Hero deadline was *looking at side menu bar* 3 days ago. I know. I fail. Laurie even gave us longer than usual to get our entry up but I still fail. Go ahead and shame me. I deserve it.

Even though I am not eligible for the super awesome Askinosie white chocolate prize, I still wanted to participate and wish Cupcake Hero many more years of cupcake contest goodness. I can’t believe I entered my first Cupcake Hero over a year ago. Memories…
Now something you may or may not know about me: I don’t like coffee. Crazy right? I mean there’s 4 Starbucks within 1 mile of me but I still can’t get into the coffee craze. Usually if I make a Starbucks run I get a hot chocolate or some other non-coffee drink. Now my husband is a different story. He loves him a good mocha… with whipped cream… and chocolate sprinkles. When my husband convinced me to try the white chocolate mocha, my coffee-hating ways had met their match.

White Chocolate Mocha Cupcakes
(Recipe adapted from Cupcakes by Shelly Kaldunski | photos from me)
makes about 12 cupcakes (I got 16 cupcakes)
INGREDIENTS
For mocha cupcakes
1-1/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup whole milk (I used half-and-half)
1/2 cup strong brewed coffee, at room temperature (I used Folgers Classic Roast)
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar (I used dark brown sugar)
1 large egg, at room temp
For white chocolate buttercream
3 large egg whites, at room temp
3/4 cup sugar
pinch of salt
1 cup unsalted butter, cut into 16 pieces, at room temp
4 oz melted white chocolate, melted and cooled
For chocolate garnish
1 cup semi-sweet or milk chocolate chips
1 tablespoon shortening
[NOTES: The chocolate garnish recipe makes a good amount. You could probably 1/2-1/3 the recipe if you are only making 12 cupcakes.]
INSTRUCTIONS
To make cupcakes—
Preheat to 350°F. Line cupcake pan with liners.
Sift together the flour, cocoa powder, baking powder, baking soda, and salt. In a measuring cup, combine the milk and brewed coffee. In a stand mixer, using a flat beater on medium-high speed, beat the butter and sugars together until light and fluffy, about 2-3 minutes. Add the egg and beat until combined. Slowly add the flour mixture, alternating with the coffee mixture, ending with the flour mixture.


Fill cupcake liners about 2/3 full. Bake for about 17-20 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Let cool before frosting cupcakes.

To make buttercream—
In a large heatproof bowl (I just use my mixer bowl), combine the egg whites and sugar. Set the bowl over simmering water in a saucepan and whisk constantly until sugar is completely dissolved (160F), about 2 minutes. Remove from heat.

In a stand mixer using a whisk attachment, whip egg white mixture on high until it holds stiff peaks, about 5-6 minutes.
Switch to flat beater and add the salt. Add butter a few at a time, beating well after each addition. Don’t worry if buttercream starts to look curdled. Just keep beating on until buttercream is smooth and creamy, about 3-5 minutes. Add melted white chocolate to the buttercream, mixing until combined.


To make chocolate garnish—
Melt chocolate with shortening over double broiler or nuke in the microwave in 10-15 sec intervals until melted. Line a baking sheet with wax paper, prepare piping bag/parchment bag with melted chocolate and pipe your design.

He’s not into white chocolate. He likes his mocha plain jane so the white chocolate buttercream wasn’t his favorite but he loved the mocha cupcake.

Mocha cupcake good. White chocolate buttercream great. Aren’t my cupcake “coffee cups” so cute? I really dig how the chocolate steam came out. The heart might be a cute Valentines idea, no?
