I just made your funfetti cupcakes into a 2 layer cake and it was AWESOME. Totally tastes like the box but better cause it's home made. I did use marshmallow icing though. Everyone loved it and my one year old son at the entire piece! http://ovenadventures.blogspot.com/2011/07/exception-to-rule.html

Hi there! I prefer gel coloring over the liquid coloring for my frosting b/c (as you said) it doesn't take as much to get the coloring you need. Red is always kinda difficult for me to get it to be that bright red. I tend to have to add alot of coloring. Maybe you could make a batch of the vanilla buttercream and take out a spoonful of buttercream into a small bowl and test it out with the gel coloring before you put gel coloring in the whole batch. HTH!

They look delicious! I was wondering about coloring the icing, do you think this icing would stand up to gel coloring? I always have the best results with that it seems. I am looking to make mini cupcakes in the form of a confederate flag as a birthday cake for a friend. Meaning a very vibrant red and blue, how would this icing do with that?
