Cupcake Hero’s first ingredient!
I know I said new ingredient would be posted 1st of every month but I’m posting a little early to hype it up! Sok?
*drum roll*

Bet you NEVER thought I’d choose that!
Ok so I’m not a banana fan but September 21 is National Banana Day so I decided to make the first Cupcake Hero hard b/c trust me. It’s gonna take ALOT of creativity for me to like a banana anything. HA HA! But just so I’m not biased in my banana hate, my banana-loving husband and taste testers will help me.
What you waiting for? Push your kids out the door to school, fire up the Kitchen Aid mixer, get that butter to room temperature, screw in those piping tips and start baking!

National Cupcake Day Giveaway **WINNER**

Hey! Thanks for asking!
I’m a very methodical person. Call it OCD, idiosyncrasy, pocket protector nerdy… whatever. But when you ask me to pick a favorite anything, I take it seriously. So this is what I did. I narrowed down the list by looking for all the important dates relevant to my life: my birthday, husband’s birthday, wedding anniversary, dating anniversary (Yes, I still celebrate that!), brothers’ birthdays, mom’s birthday, dad’s birthday, parents-in-laws’ birthdays, brother-in-law’s birthday, sister-in-law’s birthday, godsons’ birthdays, best friend’s birthday.
And I gotta tell ya. My peeps are getting stiffed! Some of them have terrible food holidays on their birthdays.
National Artichoke and Hearts Day.
National Bagels and Lox Day. (That’s yours, Nikki. I like bagels… but lox? No thanks.)
National Day of the Mushroom.
But besides National Cupcake Day (duh?) I’ll have to go with my wedding anniversary and National Creme Brulee Day. That’s just all kinds of fabulous. I heart torched sugar.

Happy National Cupcake Day **GIVEAWAY** (Time’s up!)

I’ve heard rumors in the cupcake world that August 18th is National Cupcake Day but I’m a little confused. (But that’s nothing new, eh? HA!) I can’t seem to find a positive ID on National Cupcake Day except on my favorite food holidays website: American Food Holidays. According to them National Cupcake Day is December 15th and August 18th is National Soft Ice Cream Day.
Say wha? *scratching head*
But just in case it really *IS* National Cupcake Day, I figured I’d do good by the cupcake gods by having a little ‘ol giveway!
If you’re like me, you LOVE giveaways, no?
I’m a little (ok. A LOT) crazy about entering them. But I’m also kinda lazy and the giveaways that make me do more than comment I gotta be honest… I don’t enter. Sometimes I’ll tweet for an extra entry but that’s about it. Gotta keep it simple for me to enter. That’s my philosophy.

As I mentioned in my previous post, CUPCAKE HERO is back. With a vengeance.
Without further ado. Let me break it down for you.
Rules:
> New ingredient or theme will be posted 1st of every month 22nd of the previous month. Ingredient must be used in the frosting and/or “cake” in some way shape or form.
> Deadline to enter will be the 15th of every month @ 11:59pm EST.
> All participants welcome but some international entries may limit prize shipping abilities.

You read it here first! Cupcake Hero is back, baby!
As much fun as I’ve had participating every month in Iron Cupcake, I have a sweet (no pun intended *snort*) spot in my heart for the original cupcake blog event known as CUPCAKE HERO started by my dear friend Laurie of Quirky Cupcake almost 2 years ago. This was the first cupcake – scratch that – food blogging event I EVER participated in!
Gosh. How time flies…

Oops! For a minute there my mind wandered and I was singing a duet with Barbara Streisand.
Now you may or may not have read on Laurie’s blog that her son was recently diagnosed with epilepsy. And as any great mother would, she made the hard decision to cut back on blogging responsibilities and focus on her son and family. While the rest of us cupcake bakers understood, it definitely left a hole in the cupcake world (in my humble opinion).
But I’m happy to report that with Laurie’s blessing… I’m bringing CUPCAKE HERO back!

Threadless tshirt+MS cupcakes = Threadcakes! p.2

Right. about. now. You should be getting the sudden revelation as the light bulb flickers above your head.
Now you’re catching on… It’s all part of the master plan.
I decided to use >> THIS << threadless tshirt design. I’m pretty sure if you know me well enough you’ll understand why. Am I right? Does this tshirt scream CB or what?

I gotta tell ya that I am a little bummed that the only sizes left in this design are guy’s XS and S. Um. Not. Okay. There are 2 problems with that. #1 I’m not a guy (at least my husband hopes not!) and #2 I am nowhere near a S much less an XS. So I’m hoping Threadless will bring this one back on a reprint sometime in the future. (There’s no shame in begging right? Please please…)
In the meantime I guesssss I’ll just be happy to bring you my version in cupcake form.
I had grandiose plans to make all 58 bunnies but alas the powder sugar gods were against me and I ran out of frosting after 11 cupcakes. Not to mention that the black fondant turned my white countertop –> PINK!! Husband is not gonna be happy about this when he gets home. But I hope you still enjoy the ones I did make anyways…
INGREDIENTS
cupcakes
white fondant (See MMF recipe here)
black fondant (I used Satin brand)
buttercream
various piping tips (to make small circles)
various cookie cutters (star, bunny, triangle, circle, flower)
knife
fondant roller
ice cream scoop
INSTRUCTIONS
Roll out fondant to about 1/8″ thickness. Use the bunny cookie cutter to cut out the “ears” and let dry on a parchment paper lined cookie sheet overnight to become firm.


(I used MMF but found that it didn’t get very firm so I added some Wilton fondant with the MMF to get it to the stiff consistency that I wanted. I’ll have to do some research on what I need to add to MMF to get it to harden. Any thoughts readers?)
Use a regular ice cream scoop to create dome shape of the “bunny’s head” for each cupcake. You can use an offset spatula to create a smooth surface but I think it’s easier to use your fingers.


Do you see my pink countertop? Holy pinkness batman!
Apply light pressure and push the “bunny ears” into the middle of each cupcake.

To create the eyes, use the smaller end of a Wilton 12 piping tip. To create the nose, use one side of a triangle cookie cutter.

To make each individual bunny cupcake, I used black fondant and various piping tips, cookie cutters and free hand knife skillz (us gangsta bakers use “z” instead of “s”) to create each face. It’s amazing what you can conceive with a few random decorating gadgets and your imagination, eh?
Which one’s your favorite?
I think it’s a tie for me between Harry Potter Bunny (lightning bolt one. Get it?) and Friday the 13th Jason Bunny.

Although Pulp Fiction John T Sideburns Bunny and Captain Jack Sparrow Bunny are pretty darn cute too.

Then again isn’t Flower Power Bunny groovy and Jem Rockstar Bunny make you wanna party everyday? (Who remembers Jem?? The pop star with the superpower star earrings.)

And the more I look at Devil Wears Frosting Bunny, Gangbanger Bunny (he got in a knife fight with a rival gang and lost an ear), Tiger Woods Bunny and Fred Ast-hare (har har har) Bunny, I just can’t choose a favorite!


Ok I give up. It’s mission impossible to pick favorites in cupcakes or kids. HA!
PS. If Andy Pitts (the tshirt designer) happens to read my blog I’d LOVE LOVE LOVE a hoodie please! I’m not a big tshirt person but hoodies are a TOTALLY different story! Preferable L so that the “girls” will be comfortable. Kthanxbye.

Martha-licious Buttermilk Cupcakes p.1

Yup! That’s right. Vacation is over and now it’s back to reality. Can you say… major BUZZKILL? I am missing Mexico (and pina coladas) already… Le sigh.
I bet you can’t guess what I did after opening my door, dropping my purse, carryon bag and suitcase on the floor?
Ok maybe Twitter was the first thing (Hey I was internet-less for 8 days!! Cut me some slack!) but besides that…
Screw the laundry! I’m baking cupcakes! Of course. Not just any cupcakes. Martha cupcakes.
But that’s the only teaser you get. You’ll have to come back tomorrow for Part deux.
I’m such a butt huh?
Man! It’s good to be home. *evil laugh*

Recipe adapted from Cupcakes by Martha Stewart
Makes about 18 cupcakes
INGREDIENTS
1-1/2 cups cake flour
3/4 cups AP flour
1/2 tsp baking soda
1 tsp baking powder
3/4 tsp salt
1/2 cup butter, unsalted and room temp
1 cup sugar
3 large eggs+1 egg yolk
1 cup buttermilk
1 tsp vanilla extract
INSTRUCTIONS
Preheat oven to 350F. Line cupcake pan with liners. Sift both flours, baking soda, baking powder and salt. Set aside.
In a stand mixer fitted with flat beat, cream butter and sugar on medium-high speed. Reduce speed and add eggs, one at a time until combined. Reduce speed to low and add flour mixture in 3 additions, alternatively with buttermilk in 2 additions. Beat until combined. (Try not to overbeat.) Add vanilla.


Fill cupcake liners about 1/2-2/3 full. Bake for about 17-20 minutes or until toothpick inserted in center comes out clean. Let cupcakes cool completely before frosting.
