Even though I haven’t chosen September’s winner yet, there are A LOT of you that are pitching a fit for October’s ingredient. I LOVE all the enthusiasm! I’ve gotten emails, comments and tweets begging me to announce the next ingredient. Patience is a virtue… that I don’t have so… here we go.

But before we announce the ingredient *ducking stale cupcake stumps being thrown at me* it seems like the consensus on our flickr group discussion regarding the new monthly ingredient was to build up the suspense with hints so that’s what I was trying to do! Apparently some Cupcake Hero-ers weren’t feeling the haiku, eh? FYI hints are SUPPOSE to be vague. Just saying.

I’m a Fall girl. When October arrives I get all giddy for the trifecta of holidays: Halloween, Thanksgiving and Christmas. It’s the most wonderful time of the year. Halloween is my husband’s favorite holiday (Thanksgiving is a close second b/c of the food gorging and no gift buying thing) so I let him pick the ingredient this month. Of course he chose pumpkin. He’s a pumpkin freak. Cookies, cheesecake, cupcakes, pie, Starbucks etc etc. I think pumpkin is like his bacon. You pumpkin it. He will love it.

But wait. I’m not done yet.

Now I don’t know if my readers remember, but last year I co-hosted a Halloween cupcake contest with Cassie of How To Eat A Cupcake but unfortunately due to time constraits Cassie is unable to host with me this year. *sad face* (Congrats to her for starting her new biz though!) So I said “What the heck? I’ll combine Cupcake Hero and Booo-tiful Cupcake Contest for double the trouble fun!”

Not only do you need to include pumpkin in the cake, filling and/or frosting, you need to make your cupcake Halloween-y. (UPDATED: Due to an unforeseen (or maybe I’m the only one that didn’t know?) pumpkin shortage I’m changing so that you can substitute squash if you can’t find pumpkin.) Bake your cupcake with pumpkin (or squash) in the cake, filling and/or frosting and decorate your cupcake Halloween-y. “Halloween-y” is open to interpretation. You can use fondant, candy, frosting. Anything goes. Your cupcake creation. Your call. Just bare in mind that I’ll be recreating them so I’m more likely to invoke baker’s choice with something that’s not gonna take me days to put together but still makes me scream in terror! Check out last year’s entries for inspiration.

Cupcake Hero [Banana] Throwdown

Wow. Just wow.

I am in shock at how many votes you all got in our first Cupcake Hero challenge. Almost 1400! That’s what I’m talking about!

Now be honest. Raise your hand if you sat in front of your computer and voted for yourself 100x? Don’t look innocent. There’s no shame in voting for yourself over and over again. Heck if the rules say I can “vote as many times as you want” you better believe I’ll be hitting “vote” every 5 secs. I might throw in a mercy vote for a few of my cup-testants here and there but it’s really all about me, Baby! Call it egotistical (I call it competitive spirit) but if you don’t think you’re the best how can you convince others right? However after getting some concerned emails from fellow Cupcake Hero-ers, I decided in the name of fairness, I’ll be changing the rules to 1 vote/person from now on.

Any complaints call Jenny at 867-5309.

Ok. Enough administrative business. Let’s talk cupcakes. If you check out the side menu bar, there was a tight 4 way race for voter’s choice but eventually Christy’s Peanut Butter Banana Sandwich Cupcake came out the favorite with 319 votes! Whoa mama! Congratulations Christy! Are you ready to see who you’ll be facing?

Baker’s choice (hey that’s me!) was a hard one. There were so many cupcakes that I wanted to bake and probably will later. I hope you all realize how momentous this occasion is. Me? Of all people. Wants to bake banana cupcakes. Key word. WANT.

But eventually I kept coming back to one cupcake. It had me at burnt frosting.

Yup, I’m finally doing it. Finally getting off my butt and getting serious.

Right now I’m small scale. I bake for me. I bake for my blog. I bake for Hubs’ coworkers. I bake for friends, family, friends of friends on the side for extra money here and there but I’m ready to take it to the next level. I’m in the process of creating a business model to get this party started! Life’s too short to work a 9-5 and hate your job. I want to wake up every morning and enjoy what I do every day. Is that too much to ask?

I know what you’re all thinking. “In this economy, you’re lucky to have a job, CB. But am I? Am I really? Ok maybe I am lucky, yes. But happy? No. That is the more important question IMO.

But I need some help. Will you help me?

I need a hook.

I need an eyecatcher.

Something that pulls people in and keeps them coming back.

I need a tagline… for my cupcake business.

Orange Creamsicle Cupcakes

I have a really terrible memory. Ask anyone that knows me. I’m a post-it rockstar. I have to write everything down or I will forget. It’s just a fact of my life. I don’t fight it. I just embrace color code it.

So it shouldn’t surprise you that I have no idea how Marilla from Cupcake Rehab and I met. I think it was via Cupcake Hero and Laurie of Quirky Cupcake? Or was it our mutual love of Anne of Green Gables? *scratching head* But when I read on her blog that it was her 2 year blog birthday there was no question, I had to celebrate with her! It has nothing to do with the fabulous prizes she’s giving away either. No sirree bob. It’s all in the name of cupcakes and friendship. *wink*

After perusing her blog for more time than I care to admit, I knew I’d be making Orange Creamsicle Cupcake as soon as I saw it. It’s been on my to-do list for a long time and this was the perfect occasion to go for the twofer. You all know how much I love twofers right? Well I do.

Recipe adapted from Cupcakes by Martha Stewart and Dulcedo

Makes about 12 cupcakes (I got about 15 cupcakes)

INGREDIENTS

For orange-vanilla cupcakes
2 cups AP flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
3/4 cup heavy cream
1 tbsp orange zest + 1/4 cup fresh orange juice (1 orange)
1 tbsp pure vanilla extract
1/2 cup (1 stick) unsalted butter, room temp (I used 1/4 cup+2 tbsp of Citrus Olive Oil)
1 cup sugar
2 vanilla beans, scraped (I used 2 tbsp vanilla bean paste)
2 large eggs

* Check out this great link ~> for substituting olive oil for butter in your baking. Special thanks to Temecula Olive Oil Company for sending me citrus olive oil to try!

For orange buttercream
1/2 cup (1 stick) unsalted butter, room temperature
4 cups sifted powdered sugar
1/4 teaspoon vanilla extract
1/4 teaspoon orange extract
1/8 cup orange juice (preferably fresh)

For marshmallow cream frosting
1-7oz jar of marshmallow cream (I used marshmallow fluff)
1/2 cup (1 stick) unsalted butter, cut into pieces, room temperature

INSTRUCTIONS

To make orange-vanilla cupcakes—
Preheat the oven to 350F. Line cupcake pan with liners.

Sift together the flour, baking powder, baking soda and salt. Set aside. In another bowl (I used Pyrex measuring cup instead b/c it’s easier to pour), combine the heavy cream, vanilla extract and orange juice. Set aside.

In a stand mixer, fitted with a flat beater, cream the butter, sugar, vanilla bean seeds and zest until pale and fluffy. Add eggs, one at a time until well combined. Add flour mixture in 3 additions, alternating with heavy cream mixture in 2 additions, ending with the flour mixture.

Fill cupcake liners about 1/2-2/3 full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.

To make orange buttercream—
In the stand mixer, fitted with flat beater, beat the butter at medium-high speed until creamy. Add half of the powdered sugar, both extracts and the orange juice. Stir to combine. Gradually add the remaining sugar until the frosting reaches your desired consistency.

To make marshmallow cream frosting—
In a large bowl, whisk the marshmallow cream and butter until smooth. Cover with plastic and chill until firm about 15-30 minutes.

Even though he’s not a big citrus in desserts fan, he raved about the “cake” and the frosting. “Tastes just like a creamsicle!” Duh Husband. HA HA

Wifey rating: A/A+
I LOVE how the cupcake came out taste-wise. I think the citrus olive oil really brought out the citrus flavor in the cupcake. And olive oil makes it healthy right? But I am kinda bummed that my frosting didn’t come out as vibrant as I wanted. You can barely see the double swirls. *sad face* Next time I will pump up the orange food gel and instead of piping the marshmallow cream with the orange buttercream, I plan to fill the cupcake with the marshmallow cream since the marshmallow cream didn’t hold up to piping very well.

Other: A/A+
T said all his coworkers raved about how much it tasted like a Orange Creamsicle. He told me that he didn’t even get one himself b/c by the time he got up front to get one they were all gone! Poor deprived husband. HA HA!

Creamiest Lime Cream Meringue Cupcakes

I’m a whore.

(Talk about an attention grabbing sentence, eh?)

Let me rephrase. I’m an email/comment whore. One of the best parts of blogging (for me) is interacting with my readers. I L-O-V-E getting emails and comments about my cupcakes, random questions, interesting propositions etc etc. But one of the most common questions I get is “How do you come up with your cupcake recipes?”

To be honest. I’m not sure how to answer the question. Is it cliche to say “It just comes to me”? I know that’s not the answer that most people want to hear. I guess I’d say that most of the time it might be a picture, a word, an idea, another recipe that inspires me to come up with a cupcake concept.

For example. This particular recipe was inspired by my baking group, Tuesdays With Dorie (btw Laurie has opened up membership so if you wanna get involved do it now!) and the most delicious lime cream pie that we made about 2 weeks ago. (Thanks to Linda from Tender Crumb for hosting. If she hadn’t chosen it I am not sure I would have ever tried it!) I always knew I was a lemon girl but limes? Eh not so much. But boy oh boy when I tried this pie I became a lime convert!

Can I let you in on a little secret though? I’m not a pie person. I’m a cupcake girl. (Hello Captain Obvious!) All the sudden it just hit me. How can I make this pie into a cupcake?

All it takes is an inspiration and an idea. The rest is history.


Recipe adapted from B:FMHTY by Dorie Greenspan and Cupcake Bakeshop by Chockylit

Makes about 15 cupcakes

INGREDIENTS

For graham cracker cupcakes
1 cup graham cracker crumbs
1/4 cup (1/2 stick) melted butter
1/2 cup (1 stick) unsalted butter, room temperature*
3/4 cup light brown sugar
2 large eggs, room temperature
1-1/3 cups all-purpose flour
1/3 cup graham cracker crumbs
1 teaspoon baking powder
1/8 teaspoon salt
2/3 cup milk
1 teaspoon vanilla

* Original recipe calls for 3/4 cup butter, but I took Cheryl’s advice to cut it to 1/2 cup instead

For lime cream filling
1/2 cup sugar
Grated zest of 2 limes**
2 large eggs, preferably at room temp
1/2 cup fresh lime juice (from about 3 limes)
1/2 inch chunk of fresh ginger, peeled and finely grated
1 teaspoons cornstarch
1/2 cup+2 tbsp (1-1/4 sticks) unsalted butter, cut into tablespoon size pieces, at room temp

** Can reduce this to 1 lime if you want less lime tang but I LOVE lime so I punched it up with 2 limes.

For the meringue
4 large egg whites, at room temperature
1/2 cup sugar

INSTRUCTIONS

To make cupcakes—
Preheat oven to 350F. Line cupcake pan with liners.

In a separate bowl, combine 1 cup of graham cracker crumbs and melted butter. Scoop a teaspoon++ into each cupcake liner, pressing down to cover the bottom. Set aside.

Whisk together flour, graham cracker crumbs, baking powder, and salt in a bowl. Set aside.

In stand mixer, fitted with a flat beater, beat butter on high speed until soft, about 30 seconds. Add brown sugar and beat on medium-high until light and fluffy, about 3 minutes. Add eggs one at a time. Combine milk and vanilla together. Add flour mixture in 3 additions, alternating with milk mixture in 2 additions, ending with the flour mixture. Beat until just combined.

Fill cupcake liners about 2/3-3/4 full. (Cupcakes do not rise that much.) Bake for 20-22 minutes or until a toothpick comes out clean. Let cool before fill and frost.

To make lime cream filling—
Combine sugar and lime zest into a heatproof bowl (I prefer my metal KA bowl to a glass bowl for this.) Rub the sugar and zest between your fingertips for a few minutes, until the sugar is moist and the fragrance of lime is strong. Whisk in the eggs, then whisk in the juice, ginger and cornstarch.


Bring water to a simmer in a saucepan.

Set the bowl over the saucepan and stir with a whisk as soon as the mixture feels tepid to the touch. Cook the lime cream until it reaches 180 degrees F, about 10 minutes. Whisk constantly to keep the eggs from scrambling – you’ll see that the cream will start out light and foamy, then the bubbles will get bigger, and then, as it gets closer to 180 degrees F, it will start to thicken and the whisk will leave tracks. When it starts to leave “tracks” the cream is almost done.

As soon as it reaches 180 degrees F, remove the cream from the heat and strain the cream into the container of the blender (or food processor); discard the rest. Let it cool until it reaches 140 degrees F, about 10 minutes.

Turn the blender to high speed (or food processor) and add the butter a few pieces at a time until butter incorporated. After all the butter is in, continue to blend the cream for another 3 minutes. If you find the machine is getting really hot, work in 1-minute intervals, giving the machine a little rest in between beats.

Pour the cream into a container, press a piece of plastic wrap against the surface and refrigerate the cream for at least 4 hours, or overnight. (The cream can be packed airtight and frozen for up to 2 months; thaw overnight in the refrigerator.)

Optional: I thought it would be fun to dye the lime cream a light green color. I used Wilton kelly green until I got the color I wanted.

To make meringue—
In a stand mixer with a clean dry mixer bowl and whisk attachment, whip the egg whites at medium speed until opaque. With the mixer still running , add the sugar in a slow stream and continue to beat until the whites are glossy and form firm peaks.


To assemble cupcakes—
Remove center of the cupcake using the cone method. Fill cupcake with lime cream filling using piping bag+tip or spoon. (I used piping bag and Wilton 1A round tip.) Dollop generous amounts of meringue on top of cupcake and use the back of a spoon to make swirls.

Brown meringue by 1 of 2 options:

(1) Pop cupcakes in the oven under the broiler until the meringue is a golden brown. (This happens quickly so don’t walk away!) Let cool for 5 minutes then refrigerate for 1 hour before serving.
or
(2) Use your blowtorch to brown the meringue. Refrigerate for 1 hour before serving.

He really loves the lime cream filling but I think he liked the “pie version” better than the cupcake version.

Wifey rating: A
Can I just say that the lime cream is AH-MAY-ZING! This cupcake really turned out delicious but the pie is just a tad bit yummier.

Other rating: A/A+
I brought it over for family Labor Day BBQ and there were nothing but raves. Hubs’ youngest cousin exclaimed “IT’S GREEN!” when he bit into the center of the cupcake. He followed up with “… but I’m glad it doesn’t taste like spinach b/c that’s gross. This is way better!” Cracked me up!

Do you like traditions?

I like traditions. It’s something familiar. Something you can look forward to ya know?

We’ve had this tradition around my house (apt) for the past 6 years ever since my husband became a teacher.

It’s our annual Labor Day Barbecue Pool Party.

We usually have it the Saturday before Labor Day to avoid the pool crowds and it gives our friends time on the “actual” Labor Day to spend with their families. You’re probably wondering why since he’s become a teacher? Well… It’s kinda like an end of summer hurrah before the school year starts too.

He’s actually kinda cute about it. He starts planning it out a month in advance. I’m talking grocery lists, sending out Evites, obsessively checking everyday to see if anyone has responded to the Evite, complaining to me when people haven’t responded to the Evite, calling people b/c they haven’t responded to the Evite… (Do you see a theme here?) My husband is what you would call a “crazy person”. All said with love of course.

At our last barbecue I made the mini sirloin burger cupcakes so this barbecue (Wow, I never realized how many barbecues we have…) I wanted to do something different. Ever since I saw Kristin of Meringue Bakeshop’s Cupcake Kabobs in the Orange County Register I knew I had to make some! But of course I had to change it up a little bit.

Are cupcake kabobs the new cupcake pop? You be the judge!

I can’t even describe how much I PINKY PUFFY HEART these kitchen towels. I was on my nightly lurking on Etsy, saw these cupcake earrings and IMMEDIATELY contacted Sandi about making them available to my Cupcake Hero winners.
