Pina Colada Cupcakes

I’m kind of the unofficial room mom for my Hubs’ history department.

In short. I provide the snacks for their weekly meetings.

But you won’t find me buying fruit juice boxes and snack size bags of cheetos for them. Heck no! I’d have a full on revolt on my hands. These are adults. They need adult snacks. So I bake cupcakes. Not just regular ol chocolate or vanilla though. They get crunkcakes! And if I have any readers that are teachers… You can understand why they NEED a little crunk by the end of their day. Know what I’m saying?!! But don’t worry. It’s hardly enough to get you drunk. The teachers are still smarter than your 12th grader. *snort*

In other news.

I’M AN AUNTIE! *squeal*

My twin nieces, Allison and Whitney, were born yesterday at 4:01pm. They are both pink and healthy! Mom+dad are exhausted but doing well too. Thanks to all for your T+P. I truly believe it made a HUGE difference in their current well being.

Recipe adapted from From Scratch

Makes 12 cupcakes

INGREDIENTS

For pineapple & coconut cupcake
1-1/3 cups all-purpose flour
1-1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp table salt
4 tbsp (1/2 stick) unsalted butter, room temperature
2/3 cup granulated sugar
2 large eggs, room temperature
1 large egg yolk, room temperature
1-8oz can crushed pineapple in juice, well drained, juice reserved (I used about 1/2 cup)
1/3 cup of the reserved pineapple juice
1/3 cup sweetened coconut

For coconut creme filling
1 pkg (3-1/2oz) Jello instant vanilla pudding
1 tsp coconut extract

[Note: You won't use all the filling. Save the leftovers for an after school snack or double the "cake" recipe to make 24 cupcakes.]

For pineapple rum whipped cream
1-1/2 cups heavy whipping cream
1-3 tsp pineapple rum, to taste (I used Captain Morgan)
2 tbsp granulated sugar

1/2 cup sweetened coconut, toasted*, garnish

*I toast in my skillet on medium-high heat but don’t walk away! It happens fast. Or you can bake in a 350F oven for 8-10 mins.

INSTRUCTIONS

To make cupcake—
Preheat oven to 350F. Prepare cupcake pan with liners.

In a separate bowl, sift the flour, baking powder, baking soda and salt. Set aside.

In a stand mixer, fitted with a flat beater, combine butter and sugar and beat on medium-high speed until fluffy. Add the eggs and egg yolk one at a time and beat well after each addition. Decrease to low speed and add the crushed pineapple. Beat in the flour mixture in 3 additions, alternating with the pineapple juice, beginning and ending with the flour mixture. Fold in the coconut.


Fill cupcake liners about 1/2-3/4 full. Bake for about 20-22 mins or until toothpick inserted in the center comes out clean. Cool completely before frosting.

To make coconut cream filling—
Make pudding as directed on the box. Add 1 tsp of coconut extract.

To make whipped cream—
In a stand mixer, using the whisk attachment, whisk together heavy cream and sugar on low until you have stiff peaks. (Hint: Turn bowl upside down and if whipped cream doesn’t fall out, it’s stiff.) Fold in pineapple rum to taste.

To assemble cupcakes—
Remove the center of cupcake using the cone method. Add about 1-2 tbsp of coconut creme filling. Trim down cupcake top and replace over the filling. Using a Wilton 1M (or favorite star tip), pipe pineapple rum whipped cream on cupcake. Garnish with toasted coconut.

ENJOY!

Husband rating: A
He has a sweet tooth but more of a chocolate sweet tooth. Any other dessert he doesn’t like it too sweet so this cupcake was great for him. He loved the filling and thought the whipped cream was a nice light topping.

Wifey rating: A-
I like the pineapple+coconut “cake” but it’s not sweet enough for my sweet tooth. Maybe if I make this cupcake again I’ll make a buttercream or cream cheese frosting to bump the sweetness factor up a notch.

Other rating: A
All of Hubs’ coworkers raved that they knew it was a pina colada cupcake from the first bite. I received many compliments for the coconut cream filling. One coworker that is allergic to coconut ate one too! He said the rash would be worth it later. HA HA!

Little Johnny is 5 years old. He needed to go to the bathroom so he asked his teacher for permission like a good boy is suppose to do.

Teacher: Only if you can recite your ABCs.
Johnny: A-B-C-D-E-F-G-H-I-J-K-L-M-N-O-__-Q-R-S-T-U-V-W-X-Y-Z.
Teacher: Where’s the P?
Johnny: It’s running down my pants!!

Oh man. That joke makes me laugh every time. Hey! Why are you rolling your eyes? I never said I was the Last Comic Standing. Cut me some slack and just laugh dammit.

Fine don’t laugh. See if I show you what I do with the white squares and alphabet. So there.

Ladybug Cupcakes for the Baby Shower that wasn’t.

I’m kinda sort of a twitter whore.

So if you follow me on twitter you’ll recognize the above iPhone picture. These past few days have been filled with fondant, ladybugs and babies. (Not necessarily in that order.) Hey why are you looking at me like that? Kinda like you wanna say “Aaawww” while staring at my belly? Oh no! It’s not what you think. I’m not having babies. (Sorry Mom.)

My SIL is preggers with TWIN girls. And guess who got nominated to bake the baby shower cupcakes? ME ME ME! So I’ve been a busy bee, baking cupcakes and making fondant ladybugs for her ladybug themed baby shower. Which was today.

But then I got the phone call. Yes, THE call. This morning around 10am. My SIL was at the hospital. Her water broke. What are the odds! On the day of her baby shower. So you can imagine it was a mad scramble to try to call guests but since the trip to the hospital was unexpected and SIL hadn’t left us (me and co-hostesses) almost any contact info, we decided the easiest way would be to tell guests as they arrived for the baby shower. Somebody’s gotta eat these 50 cupcakes right?

*nervous laugh*

Forgive me. I tend to crack jokes at inopportune times when I’m anxious. The whole family is feeling a wide range of emotions right now. My husband, who’s usually Mr. Calm (or is it Cool?) As A Cucumber, is currently pacing the room as I’m typing this post. He paces. I blog. We’re all waiting to hear news. Any news. Last we heard she was in the hospital and the neonatalogist recommended trying to prolong a C-section for 48 hours to build up the twins lung development. Scary sh!t right?

So here’s what I’m gonna do.

I’m gonna write about my experience and tips to making these Martha Stewart ladybug cupcakes and you’re gonna let me babble b/c that’s what I do when I’m anxious and worried and nervous and anxious (Did I say that already?). Deal?

Now get comfy. Let’s begin.

Tip #1: Your grass is not gonna be as perky as Martha’s. Personally I thought my grass was way more natural with some straight and some that curled over every which way. At least that’s what I’m telling myself.

Tip #2: Martha says to use Wilton tip #233 to pipe the grass but I have both #233 and #234 and after debating on using the one with the smaller holes (#233) per Martha’s recommendations or the one with the bigger holes (#234), I chose the bigger holes. Because size does matter. (Am I the only immature person laughing after reading this paragraph? Hmmm… Thought so.) Obviously Martha disagrees, but I felt that the bigger holes made it easier for everything to come out and control. (Yes, I’m still laughing.)

Tip #3: But if you really want to strive to have the grass as perky as Martha’s, you could try to put your piping bag+tip+frosting in the frig to make the buttercream stiffer. I tried this and it did work for about 10 secs but I was too impatient to do this after every “blade” of grass and my biceps are weak sauce and couldn’t handle the pressure (literally and figuratively) of piping really stiff frosting. Damn my warm hands! Great in a snowstorm. Not piping frosting.

Tip #4: I made my ladybugs out of fondant. Martha made hers out of marzipan. Now I’ve never worked with marzipan but I assume it doesn’t become a wet sticky mess when you put it in the frig like fondant and that’s why she recommends using it since her instructions want you to chill the cupcake to let the grass set. But I used fondant and didn’t chill my cupcakes.

Tip #5: Martha says to pipe the grass from the center out but I thought it was easier to start on the perimeter and work my way in. I also overlapped grass too. You say center I say perimeter. It’s your personal choice.

Tip #6: Don’t ask me how Martha got her grass so dark green. I used like 10 drops of Ateco food gel and my grass was a bright green but no dark green. If you figure out how many drops it took… Come back and tell me. I’d really like to know.

Tip #7: Unless you’re a glutton for punishment. Buy the red and black fondant from a cake supply store or Michaels. True black and red are SO hard to do without the proper equipment (aka muscles) and A LOT of food gel. I’m very lucky that my cake store has fondant in every color in big buckets or in smaller quantities for all your fondant needs. If you are in the Southern California area, check out ABC Cakes in Orange or Calico Cake Shop in Buena Park.

Tip #8: Because *I AM* a glutton for punishment, I pinched off little itty bitty teeny weeny pieces of fondant to make every damn spot on each ladybug’s back. You wanna go easier? Use a black food safe pen or black food gel and back of a small paintbrush to dot a perfect circle every time.

Tip #9: Don’t sweat the small stuff. Even though I noticed that some ladybugs weren’t the same size. Some ladybugs had spots that were unbalanced. Some “grass” had bald spots. Some ladybugs had cracks in them. (Oh… Have we met? My name is Neurotic.) But did anyone notice? Nope. All I got were raves and … “You made those cupcakes? Even the ladybugs?” Yes, yes I did. And took all the credit. Martha? Martha who?

Tip #10: Actually I only came up with 9 tips but I just felt like there should be 10. It’s either 5 or 10. Anything in between just looks weird.

So there you go. It’s not hard and the results will bring you lots of wooos and aawwws. Just takes time and patience. And I won’t lie. By the time you make your 5th ladybug you’ll wanna stab yourself in the eye with a jagged sprinkle. But ask me if I’d do it again? Yes yes I would. In fact I am. For a birthday party next month.

Please keep my BIL, SIL and nieces in your thoughts and prayers. They haven’t left my mind and heart all day. I’m not what I’d call a religious person but I do believe in the power of positive thinking.

Whew! Are you all rested? January is/was a much needed refocusing month for me. I’m not trying to make excuses (ok maybe a little) but buying a house, moving and starting your own business is a major time sucker! (There I said it!) But Cupcake Hero is back for February.

Now I bet you’re all thinking I’m gonna bust out something pink or chocolate or lovey dovey to celebrate Valentines’ Day right? I admit that’s what I was leaning towards. I’m a big fan of “Love Day”. (A little Simpsons reference for all the fans!) But you know those people that ask why we have to have one day to celebrate the ones we love? Why don’t we show people that we love them everyday? Trust me. I get it. Valentines’ is a little ALOT over commercialized. But holidays are what you make of it IMO. And I for one am happy that I have one day set aside to remind me. Because let’s be honest. Life is busy. It’s nice to have one day that makes me slow down, stop and remember to tell the Husband “I Love You”. I don’t think the words mean any less if you set aside time to say them either.

Then again if you’re single. Happy Single Awareness Day!

Even though I love the tradition of Valentines’ Day, I’m not necessarily traditional about what symbolizes Valentines’ giftwise. Most women want diamonds, roses and/or chocolate. But this year I want the AeroGarden. Nothing says “love” like counter top grown fresh herbs, no? Ok maybe it’s just me. I guess I’m kind of on a food health kick of sorts. And that’s why I am tickled that we have a special guest sponsor this month.

LA Cupcake Challenge 2010

I know I was suppose to tell you all about Cupcake Hero’s February ingredient today but I made the executive decision (See? I can do that b/c this is MY blog!) to postpone it until tomorrow. Nothing like a little anticipation, eh? Don’t worry!

I must live in a bubble. I didn’t realize they had something like this! Cupcake Camp, yes. But Cupcake Challenge, no! Until my fellow cupcake friend, Kristin from Meringue Bakeshop, asked me if I were participating this year. I think my brow furrowed and I replied, “L-A-C-U-P-C-A-K-E-C-H-A-L-L-E-N-G-E ?”

So needless to say. I’m going. I’m going to support my friend. I get no joy out of eating 100s of cupcakes. Trust me. It’s all in the name of friendship. Maybe next year when I don’t have 2 baby showers, birthday and a housewarming to bake cupcakes for, I’ll try to participate. But Oy. 1000 cupcakes are A HECK OF A LOT of cupcakes to bake. Good luck with that Kristin!

I even reschedule our housewarming party so I could go. I’m a hard core cupcake-er. Don’t mess with my frosting.

EDIT #3: (Feb 9, 2010) Ugh. Found out Da Man changed the times on us little cupcake folk. I guess the story is that the hotel double booked the same ballroom so LA Cupcake Challenge event got bumped from 12noon-3pm to 4-7pm. Apparently Alice In Wonderland PR is more important than cupcakes. WHATTHEHELLMAN?!? I’m annoyed. I was looking forward to getting crunked on cupcakes+cocktails but now I’m not sure I can go. Boo FRIGGIN hoo.

Yikes! Do I have any readers left? I’ve committed blogging’s original sin. I haven’t blogged in a month! *smacks self on the hand*

So… Let’s get right down to business.

Cupcake Hero November. (Lordy. I am WAY behind!) was a doozy. You can imagine my family and friends’ surprise when I busted out a bacon laced cupcake and a peanut butter mountain cupcake during the holidays. Bacon isn’t necessarily what you’d call “Christmas”. I think they were expecting gingerbread or peppermint. But bacon? I definitely had some taste testers with reservations. But a couple of my boozy relatives were giddy over the idea Stephanie Number 2′s addition of bourbon. What lushes! But I have to admit I was “this” close to leaving out the banana in the frosting. Sorry! I just don’t think bananas have a place in desserts. I’m kind of a fruit-ist. But I resisted and stayed true to the recipe. Proud of me?

Oh… and lemme just tell ya. Stephanie Number 1 wasn’t kidding when she said to make sure I had some milk nearby for her colossal peanut butter mountain cupcake. A couple of my taste testers could barely take a bite much less talk. It was actually quite funny to see them try. I can tell you that no one hesitated to take a second bite though. The brownie cupcake with peanut butter chips were a tasty combination. Add in the ice cream…? Sinful.

So who’s the winner… you ask?

First I just wanna premise the final voting by saying that I think one cupcake-er may have had an unfair advantage. But I promise it was purely an honest mistake. Maybe it’s just me. But is this year crazy for the amount of preggos that you know too? I swear! I can count on 2 hands how many friends and family members are expecting kids in the next 6-9 months. Heck my SIL is expecting twins! (Don’t drink the water!) And you know that preggos like the “interesting” food combinations right? Remember that episode of I Love Lucy? She wanted pistachio ice cream, hot fudge with sardines!?! *shudder* What she did to that ice cream was just wrong!

So I think it must be the combination of salty and sweet that won over the preggos. (And if I’m gonna be honest I can’t forget that the lushes probably played a key role too. This lush included.)
