But you shoulda saw the looks I got at the restaurant when I said that out loud as our waiter brought my Hubs “birthday” dessert last night. Priceless.

But for now me and Hubs are off to a wonderful day of birthday pampering.

LA Cupcake Challenge 2010

Now that the last mini cupcake has been devoured… I can finally post.
Yes, I ate about 30 mini cupcakes. Give or take about 5 cupcakes. No, I didn’t do it in 3 hours. Are you crazy!?!? I janked a couple boxes from various cupcake vendors and took most of them home to share with my godsons and maybe kinda sorta eat some for breakfast over the last 3 days.
But it was obvious that many ppl that were at the LA Cupcake Challenge had done this before. They were smart. They brought Tupperware. I think Glad needs to get in on that action and be a sponsor next year. Give Nesquik a little run for their money. Just saying…
I brought my husband and my little brother with me. I think they were in shock about how many ppl were there to celebrate cupcakes. I resisted the urge to say I TOLD YOU SO but it was futile. They deserved a little I told you so after mocking me all week about driving an hour away to eat cupcakes.

When you check in at the table you get a voting card. It was pretty funny that my tickets were listed under Clara Iheartcuppycakes.

The ballroom at the Renaissance Hotel was packed. People were sitting on floors b/c there weren’t enough tables and chairs.

My brother just HAD TO get a picture with the Nesquik bunny.

Of course I scoped out the bar+cocktail situation quickly.

Note to self #1: Next year bring a notepad like a good little reporter so you can write down which people were wearing what and what cupcakes they had. I’m sorry girl in the cutesy b&w striped apron. I can’t remember what cupcakery you were representing. It was Cupcake Couture! Thanks Elise of Cupcake Activist for setting me straight.

I’m not usually a carrot cupcake person. I’m not big on veggies in cake. But these carrot cake cupcakes form Big Man Bakes were pretty darn good!

Me and Kristin of Meringue Bake Shop. Her Pretty Woman Champagne Cupcake was so FRIGGIN good. She got my vote for Best Original.

Note to self #2: I can not for the life of me remember who’s cupcake these were. If they are yours, shoot me an email or comment so I can give you proper credit. These Fall Spice Cupcakes were from Layers Cupcakes. I love the depth of field my brother got in this shot. Thanks Elise of Cupcake Activist for setting me straight on the cupcake flavor+cupcakery. That is why she was a judge, folks! I better step up my game if I wanna be a judge next year *wink*

Me and Monica of Two Parts Sugar. I thought her play on her business name and her table set up were very cute. I voted her Vanilla Throwback cupcake as Best Traditional. I’m a sucker for rainbow chip. You can read her recap on her blog (here).

Note to self #3: You need to find out where you can buy this headband. Don’t you think just wearing would make everyone around you smile? I know I was grinning when I walked by.

Oh baby! It was the holy grail of salty+sweet. The Salted Caramel Cupcake by Tavern Restaurant. Topping it with a macron is genius. I’m totally stealing that idea for my next cupcake creation. Even though it was a hard decision b/c there were so many cupcakes I loved: Key Lime by My Delight Cupcakery, Vanilla Bean Almond Cream by FairyCakes, Chocolate Vanilla Swirl by Sweet E’s… I voted The Salted Caramel as my Best Overall.

Ssshhhh… Don’t tell. But I took 2. One was for my brother. Yeah… that’s it.

Check out my cupcake bounty! At that moment I felt like I was Veruca Salt and my daddy could buy me all the cupcakes+Oompa Loompas in the world.

Fellow cupcake taste testers, Jenn of Just Jenn Recipes and Mary of Food Librarian were feeling it at the end. WUSSES! You can read Jenn’s recap (here). Mary went to the dentist for a cavity. The irony is… ironic. I think she’ll be out of commission for a few days. Poor thing.

I was hoping to get a picture with Johnny Depp b/c they were doing a promo for Alice In Wonderland at the hotel before the Cupcake Challenge event but this is about as close as I got. Shari of Bonnin Designs got even closer. She was almost able to touch him. LUCKY BITCH.

And of course I couldn’t leave Hollywood without giving some camera love to my favorite pop princess of all time. My life is now complete. Not one word out of you, Nikki. LEAVE BRITNEY ALONE!

Oh baby! There are so many fabulous ingredient inspirations for March.
According to American Food Holidays, it’s National Peanut Butter Lover’s Day on March 1st, National Chocolate Caramel Day on March 19th, California Strawberry Day on March 21st, National Orange Day on March 31st, National Lemon Day on March 31st… just to name a few. How’s a Cupcake Hero Grand Master suppose to choose?

Cupcake Hero::February [Olive Oil] Roundup+Poll

I can tell by the entries (or lack thereof) that I threw everyone for a loop this month, eh? My husband was peeking over my shoulder (I hate when ppl do that!) while I was putting together the roundup and said “No love for the Olive Oil huh, hon? Don’t be sad.” On the contrary, I’m not sad! I appreciate every entry no matter if there’s 1 or 100. So THANK YOU to all the brave olive oil embracing souls that baked for Cupcake Hero this month.
I know Olive Oil isn’t necessarily what you think of when you think of baking but there’s a new healthy baking revolution out there (I can tell by all the new olive oil cookbooks popping up on Amazon) and I’m starting to embrace it in my own life too. I’m always down for something that can bring MORE cupcakes to the masses! Whether we like it or not, obesity is on the rise but taking a step towards olive oil baking can (maybe?) give future generations a chance to have their cupcake and eat it too!
Did that come off too preachy?
Oh well… I tried.

I prefer “Love Day” to “Valentines Day” b/c I don’t think Valentines day is necessarily just to tell your husband, wife, boyfriend, girlfriend, significant other that you love them. I like to think that Valentines Day is a day to tell everyone you care about how much you love them. So…

One of my favorite Valentines Day indulgences are Raspberry Truffles. Oh baby… Forget the chocolate dipped strawberries. Give me a raspberry truffle. Better yet. A raspberry truffle and some Chambord laced champagne. Maybe throw in a dozen or so red roses too.
Women of the world! Who’s with me?
Eep! Sorry to cupcake and run but Hubs is whisking me away to a day of love filled fun. I’m crossing my fingers that it includes a hot oil massage. *wink* Hope you’re spending today with the ones you love too.

Here’s to a Grrrreat start to the new year! (Sorry I couldn’t resist.)

Dark Chocolate Raspberry Truffle Crunkcakes
Recipe adapted from Hershey’s Kitchen and Culinary Concoctions by Peabody
INGREDIENTS
For Hershey Dark Chocolate Cupcakes (I halved this “cake” recipe and got 17 cupcakes)
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY’S SPECIAL DARK Cocoa
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
For Raspberry Chambord Buttercream
1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter, room temperature
1/2 tsp raspberry extract
1 lb (4 cups) powdered sugar, sifted
2 tbsp water
1-3 tsp Chambord, to taste (I used 3 tsp)
2-3 drops of pink gel food coloring, optional (I used Ateco fuschia)
For Raspberry Truffles
2 pints fresh raspberries, cleaned and dried
5 oz semisweet chocolate
1/3 cup heavy cream
1/4 cup seedless raspberry jam
sugar pearls, garnish
INSTRUCTIONS
To make dark chocolate cupcakes—
Preheat oven to 350F.
In a stand mixer, fitted with a flat beater, stir to combine sugar, flour, cocoa, baking power, baking soda and salt. On medium speed, add eggs, one at a time, then oil, milk and vanilla extract. Change speed to low and add boiling water. (Be careful of splashing!) Don’t worry if batter appears thin.
Fill cupcake liners about less than 1/2 full (These cupcakes rise very well!). Bake for about 17-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
To make raspberry chambord buttercream—
In a stand mixer, fitted with a flat beater, cream shortening and butter. Gradually add powdered sugar, 1/2 cup at a time, beating to combine. Slowly add water until buttercream is light and fluffy. Add raspberry extract and Chambord and beat until smooth.
To make raspberry truffles—
In a small saucepan, boil the heavy cream.
In a large bowl, combine the chocolate and raspberry jam. Pour the hot cream over the chocolate and raspberry and let sit to melt chocolate for about 3 minutes. Whisk until chocolate mixture is smooth. If chocolate does not fully melt, microwave on 15 sec intervals until smooth.

Fill a piping bag+small round tip (I used a parchment cornet) with chocolate mixture and pipe into the raspberries. Let filled raspberries sit in frig for about 15 minutes. Use immediately. (Raspberries do not keep their freshness that long.)
To assemble cupcakes—
Using a piping bag and favorite large star tip, pipe buttercream on cupcake. Sprinkled with sugar pearls and garnish with a raspberry truffle.
ENJOY!
Husband rating: A+
Hubs is a big fan of the dark chocolate “cake”. I heard many comments (between bites) like “light” “fluffy” “oh so chocolatey”. Even though he usually doesn’t like any alcohol in his cupcakes he has nothing but good things to say about this buttercream. He actually licked the frosting off the cupcake. Usually he thinks there’s too much frosting on cupcakes (Blasphemy!) and tends to take 1/2 off. Score!
Wifey rating: A+
Honestly? My favorite cupcake to-date. The cake is moist and full of chocolate flavor. But the buttercream is the pièce de résistance. Oooh baby. If you don’t have time to make the cake or the raspberry truffle, make time for the buttercream. I could have licked the bowl clean.
Other rating: A+
One of my favorite clients requested some cupcakes for his Valentine but gave me free creative license to do what I wanted with flavors. Can you say PERFECT client? I came up with the raspberry truffle cupcake more with me in mind so I was a little nervous about what he and his sweetie would think. But he sent me a text message last night with 3 words “SHE SAID YES!” Aawww… I love this cupcake gig.

One of the things about having your email address available in plain sight on your blog is getting emails. Hello Captain Obvious. I love the ones that ask me cupcake or blog questions but I also get the random selection of ads, trade links with me, advertise this cupcake event or that cupcake product emails too. To be honest I’m not one for pimping out my blog for just anyone. (Twitter is different. HA!) I’m more apt to post about something that *I* would actually do myself. So when I got the email from Mary Hennessey about Food2′s Cupcake Challenge, I admit I was intrigued.

This one is for the food-tographers out there. Food2 doesn’t want your cupcake recipes. They want your cupcake photos. You don’t even have to be the one that baked the cupcakes. But obviously the photos need to be taken by you. Don’t make me say Duh. Bc I will.
I don’t even know if there are prizes but I’m thinking of entering. Is that the highest form of attention whore or what? HA HA! But I’m indecisive. I can’t choose a photo. Baby Shower 2 That Wasn’t (Again)

Since SIL was still in the hospital at the time of her second baby shower I wasn’t sure if I’d even need the baby block cupcake toppers I’d been working on for a few days. But SIL’s mom decided that “… the show must go on!” So we ended up having the shower even though the mother-to-be wasn’t there. We even played games. No further comment on that.
As probably expected, I made the cake+cupcake tier. I’m “this” close to saying DUH? but I won’t b/c that wouldn’t be very nice. And I’m a nice chick.
Since I decided you can’t have a girl baby shower without some pretty pretty princess pink, I made strawberry cupcakes and a red velvet 6 inch round cake. I’m sure you can imagine that the red velvet flavor was at the suggestion of my Hubs. Although he claims it had nothing to do with it being his absolute FAVORITE flavor. Right… husband. Right.
You can find the recipe for strawberry cupcakes (here) or (here). If you wanna get that pink factor like mine, take Debbie of Smitten Kitchen‘s advice and add a couple drops of pink food gel to the batter. Makes about 36 cupcakes.

Obviously I need a little more practice covering cakes with fondant (see the bumps, rolls and sag? I think I’ll just stick with my day job.) not to mention bringing a better camera instead of iPhone pictures but overall I was happy. And Hubs was happy ECSTATIC that no guests wanted to cut the cake so he got to eat 4 layers of red velvet himself.
What a sweet gig, eh?
