Happy Tuesday cupcake monsters,

I’ve lived in an apartment from age 19 until I (and my husband) bought our first home last November. I couldn’t wait to have a washer+dryer in the same place (so I wouldn’t have to wear a bra and walk outside to wash my clothes), a garage to park our cars, be able to paint the walls, ya know… a place of our own. One of the things that I didn’t get buying a townhouse was my very own mailbox. Poo! But that doesn’t mean I can’t make it my own with a little vinyl, my Silhouette cutting machine and some creativity.

I just used the cream vinyl that came with the machine but I plan to order some black outdoor vinyl for the final product. And add our address at the bottom.

But I thought I’d share the idea with my fellow apartment-living-cupcake-freaks in the rough draft stage anyways…

When I get the real stuff, I’ll post the step-by-step tutorial. Stay tuned.

^ A tad belated but better late than never right?

Is it lame that I made my own birthday cupcakes? I don’t think so! When I make it myself I get exactly what I want! HAHA! This year I decided to get crazy with the red, white and blue using food coloring and sprinkles galore. What more could you ask for on your 20-something-closer-to-30 something birthday?


(Recipe adapted from recipezaar | photos from me!)

Makes about 24 cupcakes

INGREDIENTS

For cupcakes
3 cups all-purpose flour
1-1/4 teaspoons baking soda
1-1/4 teaspoons salt
1-1/4 teaspoons unsweetened cocoa powder
1-1/2 cups vegetable oil
2-1/4 cups granulated sugar
1-1/4 cups buttermilk
3 eggs
2 tablespoons red food coloring
1-1/4 teaspoons vinegar (white or apple cider can both work)
1-1/4 teaspoons vanilla extract
1/8 cup water

[NOTES: I used Wilton no taste red and royal blue gel coloring instead of liquid food coloring to get desired shade]

For cream cheese frosting
8oz cream cheese, room temperature
1 cup (2 sticks) butter, room temperature
1 tsp vanilla extract
1 lb (~4 cups) powdered sugar, sifted

INSTRUCTIONS

To make cupcakes—
Preheat oven 350 degrees F.

Sift together flour, baking soda, salt, and cocoa powder into a bowl and set aside.

In a mixer fitted with paddle attachment, mix oil, sugar, and buttermilk until combined. Add eggs, vinegar, vanilla and water and mix well. Add the dry ingredients a little bit at a time and mix on low, scraping down sides occasionally, and mix until just combined. Be sure not to over mix, or the batter will come out tough.

Separate the batter into 2 different bowls. In one bowl add red food coloring. Mix to combine. Repeat with second bowl and blue food coloring.

Line a cupcake pan with paper liners. Scoop the 1/3 red batter and 1/3 blue batter into each cupcake liner.

Bake at 350 degrees F for 20 to 30 minutes or until the toothpick comes out clean. Let cool.

To make frosting—
Whip the butter and cream cheese together in a mixer fitted with a paddle attachment until creamed. Add vanilla extract. Gradually add powdered sugar. Scrape down the bowl as needed.

To decorate—

Red sprinkles, blue sprinkles, star sprinkles!

I also used pop rocks candy for some extra zing!

Red velvet isn’t my absolute favorite but it was fun to make and decorate. That’s my favorite part!

Our friends love red velvet like T and got a kick out of the colors. There were many blue and red tongues and no leftovers!

PYB Cupcakes

Don’t ask me why but I had PYT by Michael Jackson stuck in my head last Friday so it became the inspiration for this cupcakes’ namesake.

These cupcakes were created for my dear friend, Rachel and her BFF. She’s the maid of honor for her best friend Jill’s wedding this summer. Even though I haven’t had the privilege of meeting Jill face-to-face, I feel like I know her b/c Rachel speaks so highly of her all the time. I knew whatever I created for Jill had to be special b/c the cupcakes were kicking off their fabulous girls only weekend before Jill-the-bride becomes Jill-the-wife.

Rachel is the perfect client. She told me exactly what kind of cupcake she wanted but gave me creative freedom with decoration. I didn’t hesitate for a second after she told me that she wanted a vanilla cupcake. I knew this was a perfect time to try out a cupcake recipe that’s been on my must-bake list for a while: Cupcake Bakeshop’s vanilla trio cupcakes! Its 3x the vanilla (vanilla sugar, vanilla extract and vanilla bean) in a little cupcake package. If Rachel wants vanilla; Rachel is gonna get her vanilla with these!

Note to self: Add tenderoni cupcake to list of potential IHC creations.

Pretty Young Bride (PYB) Cupcakes
(Recipe from Cupcake Bakeshop | photos from me!)

Makes about 20 cupcakes

INGREDIENTS

For 3-vanilla cupcakes
3/4 cup (1-1/2 stick) unsalted butter, room temperature
1-2/3 cups vanilla sugar
2 large eggs, room temperature
2-2/3 cups flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup + 2 tablespoons milk
1 teaspoon vanilla extract
1/2 vanilla bean, seeds scraped out

For chocolate and vanilla buttercream
2 sticks butter
7 cups powdered sugar, sifted
1/4 cup milk
1 teaspoon vanilla
1/4 cup cocoa powder

pink, white, brown fondant
flower cutter
various size circle cutters
empty egg carton

INSTRUCTIONS

To make cupcakes—
Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes. Add eggs, one at a time, beating until well combined. Measure the flour, baking powder, and salt into a medium bowl and whisk to combine. Measure out the milk and vanilla (extract and seeds) and stir to combine.

You can kinda see the little vanilla bean flecks in the batter. I.♥.it!

Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry.

Scoop batter into cupcake cups about 2/3’s full. Turn oven down to 350 degrees and bake cupcakes for about 22-25 minutes or until a cake tester comes out clean.

To make frosting—
Beat butter until creamy, scrape bowl. Add 5 cups of sifted powdered sugar, milk, and vanilla, beat until combined. Add more powdered sugar until you get to the consistency you want (not too stiff so that its hard to pipe)

Take out half of the buttercream and reserve, this is your vanilla

Add the cocoa powder to the remaining half and beat to combine, you might need to add a little milk if its too stiff, this is your chocolate buttercream.

To make fondant flowers—
Roll out fondant to about 1/8 inch thick and cut 2 different size flowers with cutters. To make the centers use any round cutter (I used the back of various piping tips to get the size I needed).

Using a paintbrush or fingertip, “glue” the center to the flower with vanilla extract and let set. To create a more curved (instead of flat) flower, let set in a egg carton for a few hours until flower keeps its shape. (I let mine set overnight)

To assemble cupcakes—
Let cupcakes cool before piping on frosting. Use a “round tip” (I use a 2A) to frost cupcake. Garnish with fondant flower(s).

He liked the vanilla cupcake and buttercream but its not his favorite. He prefers red velvet or chocolate over vanilla.

I thought it had a great vanilla flavor but I could have done with more. Maybe next time I’ll use the whole vanilla bean instead of just 1/2.

Rachel tells me that the bride/party said the cupcakes were a hit! But maybe she’ll leave a comment and tell you herself ::wink::

Today was my 3rd class of Wilton Fondant and Gumpaste and I spent 2 hours on my Sunday morning making gumpaste flowers – chrysanthemum, daisy and fantasy flower.

We started with the chrysanthemum first. I think its b/c it took the longest to make. You make a base and add about 5-6 layers to create the ruffled petals made from circle cutters. It didn’t look hard from the book but when I started attempting it, it was probably the hardest flower for me. I love the pink edible glitter that lines the outer edges of each layer. So dainty.

Next came the daisy. This was MUCH easier. You basically rolled out gumpaste to about 1/16″ thickness and cut out 2 daisy patterns with a daisy cutter and stagger them on top of each other. I decided to make the traditional yellow center for one and then a pink center for the other one. Too bad I ran out of pink glitter since I went a little crazy on the chrysanthemum so my pink daisy center isn’t as “pink” as it could be. The pink daisy –> Nikki. ILM. IATOY. ((H+L))

The last flower was the fantasy flower. Its a multiple layer flower that you use heart cutters to make. Kind of ingenius b/c you use different size cupcake liners to shape it. Right now its still in the cupcake tin and liner along with tissue paper to mold the petals but check back later for the finished picture. After the gumpaste hardened and the mold is set, it reminds me of a water lily.

I can’t believe I am one class away from completing the Wilton 4 course cake decorating class. My teacher sounded so somber when she greeted me at the beginning of class with that incredible fact. Had it really been 4 months already? wow. I know there is so much more to learn in cake decorating but in the Wilton world I’ve almost at the end.

FSIL Birthday Cupcakes

February is a crazy month for birthdays for me: future sister-in-law (T’s brother is getting married this July), hubs, and an array of friends. I always wondered why February is so full of birthdays. You’d think it would be November (9 months after Vday) right? Go figure *shrugs.

I decided to go for a 2-for this year and make funfetti cupcakes for 2 birthdays – one batch for FSIL’s birthday and one batch for my friend, Nikki‘s birthday. I spent alot of time on Nikki’s cupcakes so I took a little short cut and decorated FSIL’s with royal icing flowers (extras that I didn’t use on my cake class final exam but couldn’t bare to throw away).

I think they turned out pretty cute. Everyone at the family dinner raved about them.

I graduated from Wilton Cake Class Course 2! I had my final exam cake tonight.

I think it turned out pretty darn good! I saw T eyeing it when I got home (I said the magic word – chocolate) but told him to “BACK AWAY FROM THE CAKE!” Its so purdy I don’t wanna eat it!

Can’t wait for Course 3… FONDANT!! ::rubbing hands together::

Vive les dragees!!

In the great “french” words of my friend, Jess @ Cakespy!   Vive les dragees!! Long live dragees! Parlez-vous le français?

If you didn’t notice from my last “cup”date, I am dragees-less no more. w00t w00t!

A friend, who shall not be named to protect the faux law abiding, sent me those long sought-after cupcake decorations known as dragees. I literally squealed when I opened the package while my hubs sang “silver balls” (his serenade version of the xmas carol) in the background. I would say we’re perfect for each other wouldn’t you? LOL.

Not only did I hit the silver dragees jackpot, she even sent me some gold ones too!

I have to admit I was a little apprehensive about eating one after all the legality hype but I gathered up all my courage, closed my eyes and pop one into my mouth. It was crunchy and a little sweet. I opened my eyes slowly and happily realized that I was still breathing…  WHEW!

Snickerdoodle+Cinnamon Cream Cheese

My favorite cookie is a snickerdoodle. I even named my bunny, Snickerdoodle, for her beautiful orangy-reddish-brown fur. There’s something simply sinfully sweet about a sugar cookie with cinnamon flecks.

WARNING: If you are adverse to cake mixes, do not read (Nikki). LOL.

Makes ~20 cupcakes

INGREDIENTS

For cupcakes
1 package plain white cake mix (I used Betty Crocker white cake mix)
1 cup whole milk
1 stick of butter, melted
3 large eggs
1 teaspoon vanilla extract
2 teaspoons ground cinnamon

For frosting
1 stick butter
3 3/4 cup confectioners sugar
3-4 Tablespoons milk
1 teaspoon vanilla extract
1 Tablespoon ground cinnamon

[NOTES: I used a different frosting recipe. See link below.]

INSTRUCTIONS

To make cupcakes
Preheat oven to 350 degrees. Line your cupcake tin.

Place cake mix, milk, melted butter, eggs, vanilla, and cinnamon in a large mixing bowl. Blend for three minutes (stop to scrape once).

Pour into pans and bake for 22-25 minutes. Allow the cakes to cool completely before frosting.

To make frosting
Beat butter until fluffy for frosting. Add all other ingredients.

Royal flowers

For the past 1-1/2 months I’ve been taking the Wilton Cake Decorating class at my local Michael’s craft store upon the recommendation of my good friend, NB. Since I do everything NB tells me to do, I signed up! ;)

Right now I am 3/4 way through Course 2 – flowers and borders – and my final exam is a cake next week. (I can’t wait til Course 3 – fondant!) From the beginning of the course we’ve been working on royal icing flowers in anticipation of decorating my final exam cake. Just wanted to share my progress…

Aren’t they purdy? I’ve learned how to make a rose, daffodil, daisy (my favorite!), pansy, chrysanthemum and some others that I can’t remember. Obviously I am not a gardner. I’d rather have my hands in powdered sugar than dirt. LOL

I definitely plan to put my new found flower decorating knowledge to good use for my FSIL’s bridal shower cupcakes. I can’t wait to see how everyone reacts when they realize that I made them myself!

Youtube Cupcakes

Hello my name is CB and I am a youtube junkie. I admit it.

During one of my many random youtube searches I found a cupcake decorating video hosted by Daily Connection.

Personally I think Daily Confection is more appropriate since the guest on the show is Pink Cake Box‘s Anne Heap. teehee. She is a favorite pastry chef and cupcakery blog of mine via my GR.

Being a novice cupake decorator myself, it was fun to see how a professional decorates cupcakes and definitely gave me some new ideas for my next cupcake. I would also recommend checking out your local Michael’s for their Wilton cake decorating class. I already “graduated” from Course 1 and currently taking Course 2 – flowers and borders – and having a blast! Hope it helps inspire other novice cupcake-ers out there in blogger land…

Edible play dough

Fondant is like edible play dough for cupcake-ers…

The first time I was introduced to fondant was while planning my wedding, but let’s just say that I wasn’t a fan of the taste (I think I spit it out!) so we went with buttercream instead for the big day. Now that I am on the other side, the baking one, I can see the versatility of fondant with making some truly amazing edible artwork. I could stare in awe all day at the pictures I’ve found online. I knew that eventually someday I wanted to get my hands “dirty” and join the fun.

I always peruse the cake decorating aisle at my local Michael’s craft store. Last weekend I did a double take and 3 steps back as I was just passing a box of pre-made 4 pastel colored fondant. I figured why not? and took it home with me. Its been sitting in my kitchen pantry, wedged between my cookie cutters and a variety of sprinkles, taunting me to come play. Well… today was the day.

Its nothing too complicated – just a round cookie cutter and alphabet letters but I think they came out pretty cute for my first time! Don’t you think?

Obviously these are for my good friend, NB. Her favorite color is pink and I am pretty sure pink and green were her wedding colors but… don’t quote me on that! I wanted to make her a special cupcake b/c she encourages all my crazy food related projects with her beautiful sarcasm, wit and advice.  She is the queen of peer pressure and likes to drunk text me on occasion but I wouldn’t have it any other way.  Everyone should be so lucky to have a friend like her.  ::cheese::

Save the dragees!

I have been drooling over ALL the photos on Cupcake Takes the Cake flickr group and looking endlessly for those decorative silver balls (they also come in other colors too) called dragees (pronounced dra-jeys) that many cupcake-ers use in their fabulous cupcake creations.

But I was really surprised when I could not find these elusive suckers anywhere! I checked 3 different grocery store cake aisles and Michaels craft store but nothing. After a little research I learned that no one sells dragees in California. It’s against the law. WHAT?? Of course the next question is … why?   For more information read “The Grinch ESQ That Stole The Christmas Dragees”. (Obviously not the real article title but I like mine better don’t you?)  I appreciate safety like the next person but where is the research/proof to back up the lawsuits?  Just curious if the lawsuits got settled what did the Grinch get? I suppose his argument is caution before hindsight. But come on… christmas cupcake decorations? LIVE A LITTLE!  I don’t want to overdose on them – I just wanna decorate my damn cupcake!

Now I am a law abiding citizen. I drive the speed limit (well most of the time), don’t do drugs, don’t steal or hurt people maliciously BUT I have to draw the line at dragees. I did a google search (google is your friend) and came across many dragees websites. Some were more law abiding than me and have a disclaimer (right at the top in bright purple so you can’t miss it!) that they DO NOT ship to California while others have the “don’t ask don’t tell” capitalist philosophy. 

So… I might not be able to walk a couple blocks to my local corner market like a fellow Bostonian I know but for now a little extra effort will eventually get me some silver balls until the day dragees are free from persecution in California again…

PS. Ebay has IT.  ;)
