    • I came across your site while looking for some fun & kid friendly cupcake recipes. I have a quick and easy pumpkin cupcake recipe for you… I’m not sure if you are opposed to using a box cake mix or not though… but if you’re not above a box mix… here you go.
      Pumpkin/Applesauce Cupcakes
      1 box spice cake mix
1 small can pumpkin puree (or you can use applesauce, about 14 oz)
      1 bag cinnamon chips
Mix together dry cake mix, pumpkin, and cinnamon chips, drop into cupcake liners and bake at 350* for about 20-25 minutes.
The batter will be kind of thick and lumpy looking but will smooth out as it bakes. Don’t add oil, eggs, or water to the cake mix. I sometimes have a hard time finding cinnamon chips, but usually can order them online or find them at Kroger. They are a must for this recipe.

      Happy baking.

  5. Hi Clara,
I know that Cupcake & Sundry just won the February Cupcake Hero and I think they won another one a few months back…
Are they not required to give out the recipe and did they win just on the photo?
Seems all of the other entries had a recipe included.
I love your blog and the whole Cupcake Hero thing.
    Thanks,
    Virginia

    • Participants aren’t required to post it on their blog but if they choose not to post on their blog (or they don’t have a blog) they need to email me the recipe b/c Cupcake Hero is based on presentation and eatability. Hope that helps!
