Confession: I have a cupcake/cake stand fetish. Whew! So glad I got that off my chest. Admission is step 1 in my program.

I have square ones, round ones, mini ones, wire ones… But I’m always in awe of the DIY versions that I find online or via fellow cupcake freaks that emailed them my way. I guess I have those poor souls fooled into thinking that I can actually make one of them. Suckers.

Just thought it would be fun to share a few of my favorites with my readers.

Click “source” for the direct link with instructions for each project.

***********************************************

(Source)

I love how versatile this one is! You can just unscrew and switch out the parts to match your occasion or theme. Psst… Any excuse that directs me towards Anthropologie shopping is a VERY good thing.

(Source)

Not to split hairs but this picture is more of a cake stand in my opinion but you can easily make it a cupcake tier by building up and using various size plates. I have a feeling I know what will be on my next flea market list. Bud vases! Candlesticks! Take heed of Kate’s note. No dishwasher for this one. Hand wash only.

(Source)

I kinda new to DIY so forget projects that require power tools. I like all 10 fingers thank you very much. So this cupcake tier is right up my alley. Foam core boards. Ribbon. Paper. Glue stick. Totally doable. And it appeals to my current Modge Podge obsession. Genius.

(Source)

Another foam board one! With round cake boards. And glue stick! I am way too excited about glue sticks. *sniff* Kidding kidding! Check out Cake Journal’s cake stand gallery (here) for more examples too.

(Source)

I’m TOTALLY digging this terra cotta pots and saucer one. Now I have something I can do with all those neglected terra pots I have in my garage that I didn’t have the heart to throw away. RIP flowers. My black thumb is a gift. You wish you were as cool as me. Not.

(Source)

Whoa. This one requires MDF and power tools and things I’ve never heard of before. Hex nuts? Threaded rod? But I love the idea of being able to switch out the panels for any occasion or theme.

*************************************************

There you have it.

Lovely aren’t they? Makes me feel so inferior with my lack of DIY abilities. But it’s just easier to let Martha Stewart mass produce them and I buy them. HA!

I’d love to see if any readers try to DIY their own cupcake stand. Hit me up with an email.

Well… I’m off to find those terra cotta pots. Peace out cupcake nerds.

I still can’t believe it’s May. Where did April go?

My mom use to tell me that time goes faster when you get older but I never understood her until now. When did a month start feeling like a day? Does that mean I’m getting older? That I’m not climbing up the hill anymore? That I’m actually on the downward slope now?

To add insult to injury. Yesterday I found a white hair! Noooooooo!!!

But thankfully while putting together the round up, I found my inner child again. How can you look at all the cupcake creations and not smile? I know I did. Great now I have smile lines too! But I plucked the white hair. Out of sight out of mind!

Why do I have the sudden urge to yell… HOOTIE WHOOOOO!

THANK YOU to everyone that left me a comment on the flickr group. I’m loving the idea of Guest Hosts every month b/c it keeps Cupcake Hero going AND it will bring some traffic to that host’s blog. Who doesn’t love getting an increase in hits?! I admit it. I’m a stats whore. I don’t care if having a stat counter is tacky. I love seeing the numbers go UP UP UP! I also love finding new blogs to read. It’s win-win! I’ll be re-vamping the rules this weekend for Guests Hosts and Cupcake Hero will start up again June. Done and done.

Dorothy, you up for being Cupcake Hero’s first guest host? Email me. *wink wink*

You can’t celebrate Cinco De Mayo without a crunkcake right? Whew! Glad we agree.

Luckily one of my favorite clients couldn’t agree more. He even let me pick the boozed up cupcake to make for his Cinco De Drinko party. Now that is one awesome client. There are so many different recipes that I have saved in my drafts waiting to be tested out so I didn’t have a shortage to choose from. Although sometimes having too many choices isn’t a good thing for me. I’m SO indecisive! There’s margarita cupcakes, rum+coke cupcakes, strawberry daiquiri cupcakes, long island ice tea cupcakes, martini cupcakes, cosmopolitan cupcakes, tequila sunrise cupcakes, whiskey sour cupcakes … The list goes on and on.

But finally it wasn’t the holiday that inspired me. It was my dear friend, RP, that came to mind when I created these cupcakes. If you don’t know why they are THE DUDE‘s favorite cupcake well… I guess you just won’t get it. But I know my friend, RP, will and that’s all that matters. Please send her good vibes tomorrow. She’s going in for back surgery. And since she’s always the eternal optimist she tells me “… it aint no thang” but I’ll be thinking of her anyways, wishing her a speedy recovery while eating one of these cupcakes. Love you girl. Kisses to Lily.

PS- Cupcake Hero::April roundup + WINNER will be posted tomorrow.

PPS- Friends don’t let friends drive drunk. Be safe.

Come back soon now ya hear.

White Russian Cupcakes
Recipe adapted from How To Eat A Cupcake

Makes 12 cupcakes

INGREDIENTS

For cupcakes—
1-1/4 cups AP flour
1-1/2 tsp baking powder
1/4 tsp salt
3/4 cup sugar
6 tbsp butter, room temperature
1 large egg + 1 egg white, room temperature
1 tsp vanilla extract
1/2 cup whole milk
1/8 cup Vodka
1/8 cup + 2 tbsp Kahlua

For Kahlua Whipped Cream—
1 cup heavy whipping cream
2 tbsp powdered sugar
1 tbsp Kahlua

chocolate shavings, garnish

INSTRUCTIONS

To make cupcakes—
Preheat oven to 350F. Line cupcake pan with paper liners.

In a large bowl, sift flour, baking powder and salt. Set aside. In a stand mixer, fitted with flat beater, beat the sugar and butter until well combined, about 2-3 minutes. Add egg and egg white, one at a time, beating on low. Then add vanilla, 1/8 cup Vodka and 1/8 cup Kahlua. (Be careful of splashing!) Gradually add flour mixture in 3 additions, alternating with milk in 2 additions, ending with the flour mixture.

Bake for about 17-20 minutes or until a toothpick inserted in the middle comes out clean. While cupcakes are still warm, poke holes with a toothpick and brush tops with leftover 2 tbsp Kahlua. Remove from pan and cool completely on a wire cooling rack before frosting.

To make whipped cream—
Chill mixing bowl in the refrigerator for 10-15 or freezer for 5 minutes. (You don’t have to chill the bowl if you are short on time but I find that a chilled bowl helps when whipping the cream.)

In a stand mixer fitted with the whisk attachment, beat on medium-high speed until heavy cream becomes thick. Add powdered sugar and Kahlua and continue to beat until you get stiff peaks. Try not to overbeat! You don’t want butter.

To assemble cupcakes—
Using a Wilton 1M (or favorite star tip) pipe the Kahlua whipped cream on each cupcake. Garnish with chocolate shavings.

ENJOY!

Wifey rating: A
I love Kahlua! iIt was definitely the right decision to add Kahlua+vodka to the cake batter as well as brush more Kahlua on top. I like whipped cream but I think it would have been an A+ if I had made Kahlua Swiss Meringue Buttercream instead. Next time…

Husband rating: A
He has a slight aversion to alcoholic desserts. Too many past drunk college days but he really enjoyed the flavor of the cake and whipped cream. When I mentioned trying with buttercream next time, he said he preferred the lighter whipped cream option. He’s not a frosting freak like me. Oh well… more for me!

Other rating: (Will update later)

Ugh. Is it really almost May? Sorry Readers. (There I go again with my case of the Sorrys.)

And here are a couple more I’M-SO-SORRYs for Paige of Starting Over Again and Sophie of The Lazy Cook for waiting patiently for the bakeoff results. Again I repeat. Is it really almost May?? I’m losing my mind must less track of the days. Please tell me I’m not the only one.

Since I’ve made you wait long enough… I’ll skip right to the chase.

Congratulations Paige!
You are the Cupcake Hero::March winner! *golf clap*

Please email me with your address and I’ll be shipping out your well deserved prizes as soon as possible.

I love me some caramel and since my favorite cookies are Girl Scout Samoas, this was a no brainer. The “cake” is a little dense but it was so reminiscent of a shortbread cookie that it was fabulous with the caramel and coconut topping. Of course you can’t forget the drizzle of chocolate on top too. All of my taste tester had nothing but good things to say.

That’s no slight on the challenger’s caramel and strawberry combination though. I love strawberry. I LOVE caramel. Why have I never thought to put it together?? Thanks Sophie for introducing me to deliciousness that is strawberry+caramel. I have a feeling I’ll be making this flavor combination again REAL soon!

****************************************

Now that that business is out of the way. Please head on over to the Cupcake Hero flickr group to discuss the future of Cupcake Hero. I’ve listed a few options and would love to hear your opinions.

Oh one more thing. THANKS to all that submitted their cupcakes for Cupcake Hero::[April]. I know I had a great time seeing all the creations. Hope you had fun too. Will be posting roundup + Mr. Random generator winner tomorrow…. which probably means it’s more likely on Friday knowing my track record lately. *snort*

Thanks for your time, Cupcake Geeks.

I don’t know about you but I’m ready for Part 2. Hit it!

How often do you bake/eat cupcakes?

We bake, decorate, or eat cupcakes almost every day. Besides for our books and classes we are constantly making them for friends and family, special events and parties, or just for fun. They also come in handy if you need a favor like an extra garbage pick-up or if you want to soften up a teacher at school. Karen’s mom always says ‘kill them with kindness’ but we’ve changed that a bit to ‘kind them with cupcakes’. It really works. How can a cupcake not make you happy?

What is the best advice you have ever gotten?

Just to persevere and keep the cupcake ideas coming. When we hear how much folks love making our cupcakes it really inspires us. It is like having the audience in the stands cheer you on “Go, Cupcake!”

Do you have professional training?

Karen attended culinary school at the CIA and has been baking since she was a kid. Alan has been a photographer and visual artist for over 20 years. We have been creating desserts for photography together for magazines and books for close to twenty years. Our skills overlap and blend perfectly for creating cupcake designs.

Where do you get ideas and inspiration?

Our inspirations come mostly from everyday things. Things we love, things we think are beautiful, and things we think are funny. We love goofy cupcakes like silly fake food. We wake up with cupcakes on the brain and often find that one project will spark three more ideas. And so on. And so on. The ideas never seem to stop. Right now this keyboard is starting to look like a cupcake.

What is your favorite cupcake from What’s New, Cupcake?

It really depends on the day of the week. We love the mum cupcakes when we are feeling sweet and we love the cockroach cupcakes when we are feeling a little naughty. We love the string monster cupcakes when we are feeling lazy and we love the Chinese Take Out cupcakes when we are feeling hungry! The broccoli is really a hoot to make from green taffy and we get a charge every time we fold the caramels to make the fortune cookies for the cupcakes.

What is the craziest ingredient you have used?

Does it get crazier than fruit chews with pretzels and Twinkies? We think sugar loves sugar, you can never have too much, and it’s all so zany and fun together!

What piece of kitchen equipment you can’t live without?

We call ourselves the laziest cupcakers in town. That’s because we are always looking for things that make cupcaking easier. There are three things that we use all the time to make cupcaking simpler: the offset spatula, freezer-weight Ziploc bags, and McCormick neon food coloring. We find the offset spatula to be completely essential to cupcaking. It helps us get a perfect top on our cupcakes whether we are going for smooth or whirled, and it even comes in handy for buttering toast. We use the freezer-weight Ziploc bags to get batter into the paper liners without dribbling it all over the place as well as working as a disposable piping bag for all of our techniques. The freezer weight keeps the frosting in the bags and not all over us. And McCormick neon food coloring is so bright it makes it easy to get the vibrant colors we love without having to go to a specialty store for paste food coloring. Those are the things we use regularly to make cupcaking easy. And while it’s not an ease thing, we love having pretty liners for our cupcakes. We have been using colorful opaque liners that don’t let the cake color show through. Fancy Flours web site has a great selection of solid colors and Reynolds has a selection of foil-lined stand-alone liners in a snazzy array of patterns (they are so rigid you don’t even need to put them in a baking pan).

What design haven’t you conquered yet?

The Eiffel Tower! We really hope to create that in cupcakes one day.

Best cupcake memory?

For Karen it has to be her memories of lobstering with her mom as a kid. They call her mom the Lobster Lady because she was always pulling in lobster traps. We created the Red Lobster Cupcakes as an homage to her mom and their wonderful summers lobstering in Montauk. Alan loved designing Old Swampy because he is from South Mississippi. Every time someone down South sends us a photo of their Old Swampy alligator cupcakes it puts a big smile on his face.

Does anyone ever get tired of you always bringing cupcakes?

Who could ever get tired of cupcakes? Especially when they are decorated to look like things like Ketchup, Koi, or Karaoke. At this point if we don’t arrive with cupcakes they don’t let us in.

What are your favorite cupcake flavors?

Karen-carrot cake
Alan-red velvet

Best part of making the books?

Free candy…and meeting so many artful and creative cupcakers. What a wonderful community cupcakers are.

Will you ever write a book about something other than cupcakes?

Yes, but please don’t tell anyone!

Do you see the cupcake craze ending?

Craze? We think cupcakes have become an American tradition like apple pie and chocolate cake. America now has four baked goods categories: Cookies-Cakes-Pies-Cupcakes.

How do you organize and store all those candies and sugars?

We created a cupcake pantry filled with clear airtight containers to keep everything fresh and visible. You want to keep it out of direct sunlight and give yourself room for growth, there is always more candy to discover!

Your favorite found ingredient?

The marshmallow. We have found more ways to use marshmallows, both mini and regular, than anything else in our pantry. They are just so versatile. We have turned them unto ears, snouts, feet, flower petals, walrus tusks, alien necks, and even charcoal brickets. Maybe that could be our next book…The Marshmallow.

What design started this whole thing?

The terrier cupcakes on the cover of Hello, Cupcake! We made them to look like our dogs Lucky, Bunny, and Scout. They were our first cupcakes and will always be our favorites.

If your cupcakes had to duke it out, which one would be the last cupcake standing?

Definitely the Cockroach Cupcakes in What’s New, Cupcake? They will survive us all.

What is your favorite holiday for cupcakes?

April Fool’s Day, but we celebrate it every day. Really, is there any day that wouldn’t benefit from a Carton of Cracked Eggs cupcakes?

What cupcake gets the most oohs and aawwws?

In What’s New, Cupcake? It seems to be the Apples. They have a great shape and are really sparkly. And then you get that Aha! moment when you realize that the apple shape comes from a donut under the frosting! We live for the Aha! moment.

Which famous person would you like to make a cupcake tribute to and what would it be?

Julia Child…and we would make our Red Lobster cupcakes for her, but we would give it a string of pearls (white gum balls), and serve it with an herb butter (Laffy Taffy with green sprinkles) and a glass of Sauterne. Julia Child was all about enjoying cooking and sharing that joy, we couldn’t agree more.

Were there any cupcakes left out of the books?

Yes, but if you keep an eye on our blog and website and our newsletter which starts next month, we are sure you will eventually see most of them make an appearance. You can find links to everything, including the newsletter once it is available, on our web site www.hellocupcakebook.com

Scratch vs. Box mix?

We love a good scratch cake and make it all the time. But when we are busy, or when we need to make lots of cupcakes (which is often) we turn to our favorite box mix. We have a recipe in both books for doctoring a box mix with buttermilk and an extra egg. Try it, it makes a great cake. Same goes for frosting. We have an Almost Homemade Buttercream in the books that is amazing. But we also use canned frosting because it works so well. We happen to use Duncan Hines because we like the flavor and the way it holds up. Just be sure to avoid whipped frosting or ones that don’t have the body to hold your candy in place. And if you happen to be melting frosting like we do for dipping, canned is the only way to go.

What do you think of the whoopie pie?

Whoopie! Love it! It’s like a mixed up cupcake, hiding the frosting in the middle and not wearing pants!

Is it just you two or is there a team of developers and kitchen staff?

Wait, is that possible? Can we get that? Nope, it’s just the two of us. We create the designs together, photograph them together, and work out the books together. We each feel we have found the other (missing) half of our brains.

What is your favorite medium?

Van Gogh loved oil on canvas, we prefer candy on frosting on cupcakes.

How do you feel about cupcake wedding cakes?

We made beautiful white chocolate leaves for our wedding cake in Hello, Cupcake! We love cupcake wedding cakes. If you are looking for a more traditional design why not make small bride’s and groom’s cakes and then create cupcakes with a matching design for everyone else. It’s so much easier to portion and serve (and take home) and makes a beautiful presentation on the cake table.

Do you design for brick and mortar bakeries?

Not yet. But we have some friends who we hope will ask. We design principally for our books, web sites, and magazines.

Do your designs get drawn first, or do you go straight to the frosting?

We go to the computer a lot to find photographs that might help us design. We usually draw a design first, even scribble in the names of candy we think might work for the design. Then we roll up our sleeves and start playing with our candy. Often we already know we want to use a specific candy, so we will start with that and build on it to create a design. It is a really fun process.

What dessert do you eat on your birthdays?

It is our day off. We’ll eat whatever dessert gets put in front of us, especially if there’s frosting involved.

What do you say to cupcake haters?

Is there such a thing? Never met one.

Are there any films that have inspried cupcakes?

Yes, several. The movie JAWS was on Karen’s mind when she came up with the idea for the sharks in Hello, Cupcake! The penguins were inspired by March of the Penguins. Alan had been watching Talladega Nights: The Ballad of Ricky Bobby when he dreamed up the race car. And it’s not a film but American Idol inspired us to make the Karaoke Cupcakes in Whar’s New, Cupcake?

What is your favorite event for making cupcakes?

We love cupcakes for any kind of party or get-together They are a perfect way to make any celebration a special event, even lunch! We ate several while answering these questions and it felt really special.

********************************************************

Special THANKS to Alan Richardson and Karen Tack for allowing me (and readers) to interview them. It’s even more impressive since I know they are currently on the road promoting their new book, What’s New Cupcake, and all their answers came via Alan’s iPhone. Now you all know how much I love my iPhone but my fat thumbs can barely spell 140 characters without misspelling more than 50% of the words much less 50 interview questions+answers. What rockstars!

Come back tomorrow. I’ll be announcing Cupcake Hero::March winner (FINALLY!) and posting the new and improved Cupcake Hero rules. Thanks for your patience.

Until tomorrow cupcake freaks… don’t skimp on the frosting.

(Source)

You guys asked. And they answered.

Take it away Alan Richardson and Karen Tack. (Psst… Alan’s on the left and Karen’s on the right. Just FYI. *wink*)

What is the worst cupcake you ever made?

Sometimes our first attempt at a design will produce a grumpy baby or snarling kitten and we have to go back to the drawing board, rethink our candy, and try it again. But we always stay at it until we are satisfied with the result. We are relentless cupcakers and don’t quit till the we find the awww factor. Besides we never met a cupcake we didn’t like.

How did you get started?

We have been a food photography team for almost twenty years specializing in desserts. We just love working on sweets because it makes people so happy.

What is the first cupcake everyone loved?

That would have to be the terriers from our first book cover Hello, Cupcake! When we made them we stopped, looked at each other and said wow. And so did everyone who saw them. We made them look like our terriers Lucky, Bunny, and Scout and as a result they will always be our favorite cupcakes.

What inspires you? Candy or design?

Sometimes candy is the inspiration like when we see a Ferrer Roche chocolate and immediately think meatballs, or yellow colors of Jelly Bellies and see a corn on the
cob; but other times we have to think outside the box and go looking for a candy that we can alter to work on our design.

Do you have a tester? But you are pros, can other people do these?

Yes we have an on-staff tester named Alan. If Alan can do it anyone can. While Karen is a food stylist we work very hard to creat designs that anyone can do. Just look at our blog or Flickr page or fan page on Facebook and you’ll see thousands of photos of cupcakes made from our books by our readers. We are so proud when we see how beautiful all of the cupcakes look and love hearing how easy it is for folks to make them.

Were you always interested in cupcakes?

We have always been interested in sweets. Cupcakes became our favorite canvas for decorating about eight years ago. We still love decorating cakes and cookies too, we just happen to love cupcakes the most.

What sets What’s New, Cupcake? apart from Hello, Cupcake!?

WNC has more EZ Cupcake ideas using just a few candies and simple technique. There are also more step photos showing exactly how to create the designs. WNC has some new techniques too, like custom cookies for your cupcakes and melting crushed candies to make transparent colors fir the designs.

How long does it take to make the cupcakes?

Each design is different and each cupcaker has different skill levels, but we think a simple design can be done in half an hour while a more adventurous one could take two or three hours. In that case, we encourage you to make elements ahead where you can so that you can break up the project and just frost and assemble the day you want to finish the cupcakes.

Who is your taste tester?

It used to be Karen’s Wheaton terrier Bunny. But she got over her sweet tooth and now we taste as we develop. Our friends, family, and neighbors also help out with this dreadful chore. Sugar loves sugar so most candies taste pretty great together. If we use a candy that you dislike (or have an allergy to) just substitute something similar in look that you prefer for your design.

Do you have some tips for the novice baker?

We have lots of tip, our books are full of them. But our best advice would be to start simple, maybe try the Koi or the Ants or Mums for starters. Then practice makes perfect, just keep on cupcaking.

What is the most difficult cupcake in the book(s)?

Nothing us really that difficult. If it looks hard look closer, the individual steps are all very easy. And we walk you through it step by step on the instructions. In the end you’ll be amazed at how easy they are and how beautiful your versions will look.

What kind of cupcake would you be?

Karen would be a very nutty carrot cake cupcake. Alan would be any flavor, just decorated to look like Chocolate Moose!

What is/was your biggest catastrophe?

We were working very hard to come up with a cat cupcake that we thought looked as adorable as the ones we had in mind. It had taken us quite a while to come up with a design for them that made us happy. We finally had three really cute kitties on the set and were looking for a couple of final elements to complete the image. We turned our backs for just a moment when Bunny, Karen’s dog, grabbed the cats and ate them in one quick swallow. It was a CATastrophe! But we just laughed and started over.

**************************************************

I’ll be the first to admit that I need to do better at taking care of Mother Earth. But I’m proud to say I don’t do nothing. (Stay where you are grammar police!)

(1) I separate my plastics, paper and cans for recycling.
(2) When my bag boy asks me for “paper” or “plastic” I say neither. I use my own canvas bags instead.
(3) All my light bulbs and big appliances (refrigerator, dishwasher, W/D) are energy efficient.
(4) We rarely use the heater. That’s what hoodies, sweaters and Snuggies are for.
(5) I take showers instead of baths to conserve water.

And soon I’ll be adding to my list… plant a tree in backyard. (Actually it’s more like a teeny tiny patio w dirt.) Hopefully my black thumb doesn’t rear it’s ugly head. Sad to say my grass and rose garden attempts did not fare so well. RIP Rosey.

So in honor of Earth Day and planting a tree, I made cupcakes.

Oh and thanks to all readers who left me a comment or emailed about Cupcake Hero. I’m going to be revamping the rules this weekend. Don’t forget about Cupcake Hero::April! Only 3 days left and only 1 entry… You could have a great chance of winning some fabulous cupcake prizes.

Plant A Tree Cupcakes

Makes 18 cupcakes

INGREDIENTS

favorite vanilla cupcake recipe (here)
favorite vanilla frosting recipe, tinted green (I used 1 can Duncan Hines classic vanilla)
favorite chocolate frosting recipe (I used <1 tbsp of Duncan Hines classic milk chocolate)
18 lollipops (I used Blow Pops)
tiny red heart sprinkles
Oreo cookies crumbs

INSTRUCTIONS
Let cupcakes cool completely before frosting.

To make trees—
Dip lollipop into the frosting until covered. Use your finger to push into frosting and pull away to create peaks on the tree top.

Randomly place heart sprinkles over the surface of the “tree”. Pipe a little stem above each “apple” heart.

Tip: I used an empty egg crate on top of a towel to stand the trees up vertical while they were drying.

To assemble cupcakes—
Using a grass tip (I used Wilton #324) pipe grass on the cupcake. Place a 1.5″ cookie cutter on top to give you a guideline for the Oreo crumbs.

Place crumbs halfway up the cookie cutter, packed it in lightly and then remove the cookie cutter to create the “dirt” mound. Insert 1 tree into each cupcake.

ENJOY!

Husband rating: N/A

Wifey rating: A
I have to say that Blow Pops and frosting are AWESOME together. HA! These cupcakes were fun, easy to make and biodegradeable… in my tummy. Nom nom nom. *wink*
